I understand that some meatlovers (suffering from celiac disease) can’t enjoy my Best Meatloaf recipe, Stuffed Meatloaf or BBQ Meatloaf. Finally, a meatloaf recipe that is gluten free and comes out perfectly tender and juicy every time. You won’t be even able to say that this is a meatloaf without breadcrumbs. Filling, juicy and absolutely delicious!
Serve it with steamed broccoli, buttery mashed potatoes or cauliflower rice for low carb lovers. Nourishing dinner meal for any day of the week!
how to make meatloaf with oatmeal
- This is a meatloaf without breadcrumbs, I use oats instead. Both rolled and quick oats will work well. They work as a binding agent in this recipe. Don’t be skeptical, I promise you won’t feel them in the cooked meatloaf.
- Grate or finely chop onion and garlic, this guarantees they will be well cooked and soft. Alternatively you can sauté them. But, for saving time, the first option is the best!
- Mix everything together in the same bowl to minimize clean up.
how to shape meatloaf into a loaf
There are a few methods:
- Transfer the meat mixture onto the prepared baking sheet and mould a loaf with your hands. I find it time-consuming because you should get the same thickness for even cooking.
- You can also bake it in a loaf pan. Personally I don’t like this method because it is not always easy to take it out after baking and the edges are always soggy.
- And if you love crispy edges, shape a meatloaf using a loaf pan, then turn it out onto the prepared baking tray/ grill skillet. This method guarantees that you will have the best of both worlds: evenly cooked meatloaf+ crispy edges.
Meatloaf Sauce
This sweet and tangy glaze is easy to make. You will need:
- Tomato sauce/passata
- Ketchup
- Dark brown sugar
- White vinegar
- Worcestershire sauce
- Mustard powder
- Onion powder
- Crack pepper
Mix all the ingredients in a small bowl and pour half of the glaze over the meatloaf. Then add the remaining sauce during the baking. You can double the sauce and serve it later with mashed cauliflower or potatoes.
how long to cook meatloaf
Bake it in the preheated oven at 400°F (200°C) for 60 minutes, then remove from the oven, spread the remaining glaze and bake for another 15 minutes.
Once cooked, tent it with an aluminium foil and allow to rest for 10 minutes before slicing. Don’t skip this step, otherwise it may fall apart.

Ingredients
FOR MEATLOAF
- Uncooked rolled oats or quick oats-¾ cup
- Milk-¾ cup
- Onion ( finely diced)-1
- Garlic cloves ( minced)-4
- Fresh parsley ( finely chopped)- 2 tablespoons
- Ground beef ( lean or regular)- 2.2 lbs (1 kg)
- Mozzarella cheese ( shredded)- 1 cup
- Dijon mustard- 1 tablespoon
- Tomato paste- 3 tablespoons
- Large eggs – 2
- Worcestershire sauce-2 tablespoons
- Ground black pepper- 1 teaspoon
- Paprika-1 teaspoon
- Herb mix- 1 tsp.
- Salt-to taste
FOR THE GLAZE
- Tomato sauce/passata-½ cup
- Ketchup- ¼ cup
- Dark brown sugar- 2 teaspoons
- White vinegar-4 tablespoons
- Worcestershire sauce- 1 tablespoon
- Mustard powder- 1 teaspoon
- Onion powder- 1 teaspoon
- Crack pepper- ½ teaspoon
Instructions
- Preheat your oven to 400°F / 200°C and position the rack in the middle of the oven. Line a baking tray with parchment paper. Alternatively you can use a grill skillet for baking. Keep aside.
- Mix together oats and milk in a large bowl. Add the remaining ingredients for the meatloaf : ground beef, onion, garlic, parsley, Mozzarella cheese, tomato paste, eggs, Worcestershire sauce, Dijon mustard, ground black pepper, paprika, herb mix and salt. Mix just until combined. Don't over-mix!
- Transfer the meat mixture into the loaf pan and press lightly to shape a loaf. Turn it out onto the prepared baking tray.
- Combine all the ingredients for the meatloaf glaze: tomato sauce, ketchup, brown sugar, vinegar, onion powder, Worcestershire sauce and black pepper.
- Coat with half of the glaze, using a spoon. Bake for 60 minutes, then remove from the oven and pour the remaining meatloaf sauce over the meatloaf. Again spread it evenly with a spoon.
- Return to the oven and bake further 15 minutes. Allow the meatloaf rest for 10 minutes before slicing. This will prevent it from falling apart.
- Serve with Mashed potatoes, Instant Pot Basmati rice, Jasmine rice, or over cacio e pepe.
