This Stuffed meatloaf recipe is my twist on a classic staple. A flavorful chunk of ground meat is stuffed with spinach and eggs, rolled in black sesame seeds and baked to perfection. This easy meatloaf is juicy, delicious and perfect for holidays, special occasions or Sunday dinners!
It can be prepared in advance and tastes great the next day! Serve it with roasted veggies, homemade pasta or mashed potatoes with green veggies on the side.
Easy Meatloaf recipe
This meatloaf looks very festive and is loaded with so many flavors. The recipe has become viral among our friends and relatives. I have been asked so many times how to make this stuffed meatloaf. So finally I am sharing our family favorite meatloaf recipe. It is easier to make than my classic Meatloaf recipe.
Ingredients for Stuffed Meatloaf
Panko bread crumbs: To make sure your meatloaf is tender and doesn’t fall apart, you need to use breadcrumbs. Soak them in milk until they become soggy. Once they are soggy, mix with other meatloaf ingredients.
Milk: It adds the needed moisture to the meatloaf. For a dairy- free version, use low sodium beef stock, non-dairy milk or water.
Ground beef: What kind of meat is best for meatloaf? Use 70-75 % lean beef. Very lean meat will make your meatloaf dry. On the other hand, a fattier beef will produce lot of grease. So the perfect choice is a lean chunk of beef.
Medium onion and garlic cloves: You can add them raw or sauté in olive oil like in my Best Meatloaf recipe before adding to the meatloaf. Sautéing helps veggies release more of their moisture.
Parmesan cheese: The recipe calls for Parmesan cheese, but you can use any hard cheese (Cheddar, Emmental, Grana Padano, Gruyère , Provolone..)
Fresh dill leaves: If you don’t like dill, use parsley or cilantro.
Large eggs: Do you have to put egg in meatloaf? YES!!! Don’t skip it. They work as a binder and help meatloaf to hold its shape.
Worcestershire sauce: It adds so much flavor to the meatloaf.
Dijon mustard: The recipe calls for Dijon mustard, but even regular yellow mustard will work well.

Spinach Stuffed Meatloaf
What can be better than meatloaf? Only stuffed meatloaf! Spinach and egg stuffing turns an ordinary meatloaf into a new, healthy and delicious meal! The middle of this meatloaf is stuffed with sautéed spinach and eggs. Spinach keeps the meatloaf moist.
How to cook spinach for this meatloaf?
• Sauté spinach: In a large frying pan heat 1 tbsp. of olive oil, add spinach and cook for about 1-2 minutes, turning from time to time. Allow to cool completely, then squeeze extra liquid with your hands and chop.
• Wilt spinach: Wash spinach. Put in the large saucepan (without any oil), cover and cook for 1-2 minutes, turning frequently. Let spinach cool completely. Squeeze liquid and chop.
SESAME CRUSTED MEATLOAF
Black sesame seeds create a perfect thick crust that complements to the meatloaf so well and it also helps to retain the meatloaf’s moisture. Both black and white sesame seeds or even the combination of both will work well.
HOW LONG DOES IT TAKE TO COOK A 2 LB MEATLOAF?
I baked this stuffed meatloaf for 1 hour at 400°F / 200°C, uncovered. After baking, allow meatloaf rest for 10 minutes before slicing it. It tends to crumble and fall apart if it is hot.
400°F / 200°C = 1 hour.
375°/ 190° C =1 hour 5 minutes.
350°/175° C = 1 hour 15 minutes.
How to store meatloaf?
You can store it in an airtight container for 4-5 days in the fridge or wrap individual slices with plastic wrap, then transfer to a freezer bag/zip log bag and freeze up to 1 months.

Ingredients
FOR THE MEATLOAF
- Panko bread crumbs-2 cups
- Milk-¾ cup
- Ground beef (lean or regular)- 1 kg/ 2.2 lbs
- Medium onion (finely diced)-1
- Garlic cloves (minced)-4
- Parmesan cheese ( grated)-1 cup
- Fresh dill leaves ( finely chopped)- ¼ cup
- Large eggs-2
- Worcestershire sauce-2 tbsp.
- Dijon mustard- 1 tbsp.
- Italian seasoning- 1 tsp.
- Black pepper- 1 tsp.
- Salt- 1 tsp. or as needed
- Black sesame seeds- ¾ cup
FOR THE FILLING
- Cooked spinach ( cooled and chopped)- 2 cups
- Boiled eggs- 4
Instructions
- Preheat your oven to 400°F / 200°C with the rack in the center of the oven. Line a 15.25 x 10.25 (38 x 26 cm) inch baking tray with a parchment paper.
- In a large bowl soak panko bread crumbs in milk.
- Combine the ground beef with the soaked bread crumbs, onion, garlic, Parmesan cheese, dill leaves, Dijon mustard, Worcestershire sauce and large eggs. Season the meat mixture with Italian seasoning, black pepper and salt. Mix gently to combine.
- Place the meat mixture on the tray, push it down and stretch it out to get a ½ inch-thick (1 cm) rectangle. The process is similar to what you do with pizza dough.
- Spread spinach over the meat evenly. It will help the meatloaf to keep its moisture. And place 4 eggs in the center of the meat rectangle (watch the video). Season with salt.
- Starting on the short end, roll the meat up tightly to shape an even log. Seal the edges to make sure the filling stay inside the meatloaf.
- Roll the meatloaf in sesame seeds to evenly coat. To do this, simply put the sesame seeds on the parchment paper and roll the meatloaf in them.
- Bake for 1 hour at 400°F / 200°C. Allow to rest for 10 minutes before slicing.
- Serve over homemade pasta, cacio e pepe, mashed potatoes or steamed broccoli.
