WHY STEAMING AND NOT BOILING BROCCOLI?

Steaming and boiling are very similar cooking techniques. You won't be able to say whether steamed or boiled broccoli in front of you. However, there are some advantages of steaming.

  • Steamed broccoli will be less soggy than the same broccoli boiled.
  • It will have better nutritional value.

TIPS TO MAKE STEAMED BROCCOLI

  1. Always arrange broccoli in a single layer in a steamer basket, this will allow the steam to cover all sides o f the broccoli florets.
  2. Season broccoli before steaming as it will help to develop the flavor.
  3. The steaming water can be flavored with herbs and spices like bay leaf,  dried parsley, red/black peppercorns and cumin. 
  4. Properly steamed broccoli will have vibrant green color and you will be able easily  to pierce the stem with a  knife.

Ingredients

  • Broccoli- 800 gm/ 1.7 lbs
  • Salt - as needed
  • Ground black pepper/mixed peppercorns- as needed
  • FOR TOASTED GARLIC
  • Garlic cloves sliced-4-5
  • Vegetable oil- 2 tbsp.

Instructions

  • Wash the broccoli thoroughly, trim, peel and cut into spears.
  • Season with salt and pepper and arrange in a single layer in a steamer basket.
  • Fill a large pot with enough water to produce steam throughout the cooking time ( 5-7 cm/ 2-3 in). Bring to a boil, then place the steamer basket into the saucepan with boiling water, cover and steam the broccoli until tender, 5-7 minutes.
  • Remove the broccoli from the steamer basket, adjust salt and pepper.
  • In a large pan, heat oil and saute garlic until lightly browned; add the steamed broccoli and toss until well combined and hot.
