Cheeseburger Meatloaf Recipe
This meatloaf is so cheesy. It will explode with cheese in every bite. Best of all it is also budget friendly and will serve a crowd. A classic family favorite with my twist! The leftovers can be used to make delicious sandwiches the next day. You kids are going to love them and will ask you to make this giant cheeseburger every week.
What I love most about any meatloaf is that you can it plain without any sauce or topping because it’s so juicy and flavorful!
EASY MEATLOAF RECIPE
It may seem difficult to prepare this meatloaf, but trust me, it is a very easy meatloaf recipe without fancy ingredients. And you don’t need a loaf pan!
MEATLOAF SEASONING
For this cheeseburger meatloaf recipe, you will need the usual spices like black pepper, cumin powder and salt. The recipe calls also for yellow mustard, Worcestershire sauce and ketchup as they give an incredible flavor boost. Even taco seasoning can be used for more flavor.
Cheeseburger Meatloaf Glaze
I love to coat this huge chunk of cheesy meat with a sticky glaze similar to the one I used for my classic Meatloaf recipe. The glaze makes this this cheeseburger meatloaf not only look impressive but it adds flavor and contributes to meatloaf's juiciness as well.
Meatloaf Glaze Ingredients
- Ketchup & Tomato paste: Use the combination of tomato sauce and ketchup for the best result. However, if you don’t have tomato paste, leave it out and use ¾ cup of ketchup.
- Honey: Brown sugar can be used in place of honey.
- White vinegar
- Worcestershire sauce
- Garlic powder
- Cumin powder: Provides an earthy, warm aroma.
- Paprika: Adds to color and flavor as well.
- Crack pepper

HOW LONG TO COOK MEATLOAF
Cook meatloaf for 1 hour in the preheated oven at 400°F / 200°C, remove from the oven, pour the remaining meatloaf sauce and cook another 15 minutes or until meatloaf internal temperature reaches 160 degrees F/70 degrees C. You can monitor the meatloaf with a meat thermometer.
Note:
- In the meatloaf glaze will start browning on the tray, add a few tablespoons of water into the tray. Water will prevent the sauce from burning.
- Allow the cheeseburger meatloaf to rest for 10 minutes before slicing as meatloaf tends to fall apart when hot. Resting also allows juices to recirculate.

Ingredients
MEATLOAF
- Bread crumbs- 1 ½ cup
- Milk- ¾ cup
- Ground beef ( lean or regular)- 1 kg/ 2.2 pound
- Onion ( finely diced)-1
- Garlic cloves ( minced)-4
- Cheddar cheese ( shredded)- ¼ cup
- Tomato paste- 2 tbsp.
- Large eggs – 2
- Worcestershire sauce-2 tbsp.
- Fresh parsley ( finely chopped)- ¼ cup
- Classic yellow mustard- 1 tbsp.
- Cumin powder- 1 tsp.
- Ground black pepper- ½ tsp
- Salt- 1 tsp or to taste
- Cheddar cheese ( cubed)-250 gm/ 0.5 lbs
MEATLOAF GLAZE
- Ketchup- ½ cup
- Tomato paste/ passata-¼ cup
- Honey- 2 tbsp.
- White vinegar-4 tbsp.
- Worcestershire sauce- 1 tbsp.
- Garlic powder- 1 tsp.
- Cumin powder-1 tsp.
- Paprika-1 tsp.
- Crack pepper- ½ tsp.
Instructions
Meatloaf
- Preheat your oven to 400°F / 200°C with the rack in the center. Grease a baking sheet lightly. Alternatively you can line it with a parchment paper.
- In a large bowl soak breadcrumbs ( or 4 slices of bread) in milk.
- Combine ground beef with the soaked breadcrumbs, onion, garlic, shredded Cheddar cheese, tomato paste, eggs, Worcestershire sauce, yellow mustard, cumin powder, parsley, tomato sauce, ground black pepper and salt. Mix gently until just combined.
- Transfer the meat mixture on the tray and stretch it out like pizza dough to get a rectangle. Put Cheddar cheese cubes in the middle and roll the meat up tightly , starting from the short end. Seal the edges completely to make sure the cheese will stay inside the meatloaf. Keep aside.
Meatloaf glaze
- In a small bowl mix together tomato sauce, ketchup, honey, paprika, garlic powder, cumin, black pepper, white vinegar and Worcestershire sauce.
- Pour half of the glaze over the meatloaf and spread evenly with a spoon. Bake for 1 hour in the preheated oven, then remove and spread the remaining glaze over the meatloaf.
- Bake for further 15 minutes. Allow to cool for 10 minutes before serving/ slicing.
- Serve over homemade pasta, jasmine rice, Instant pot brown rice, Fettuccini Alfredo, cacio e pepe, mashed potatoes or steamed broccoli.
