If you watch your daily carbs intake, this dish will be ideal for you! It is light, creamy and absolutely delicious! Such a great way to use cauliflower. And thanks to an Instant Pot, it will be on your table in 5 minutes. Honestly, if you are on keto diet, mashed cauliflower is the BEST alternative to regular buttery mashed potatoes.
It is easier than mashed potatoes. Preparation takes about 2 minutes as you don’t need to peel cauliflower. Simply throw all the ingredients in your Instant Pot and let it do the job.
Mashed cauliflower accompanies well any roast or meatballs like Lemon Garlic Roast Chicken, Garlic Herb Butter Roasted Chicken, Mojo Chicken or Swedish Meatballs.
how to make cauliflower like mashed potatoes?
Whether you plan to cook it for dieting purposes or just because you love cauliflower, it will taste very similar to everybody’s favorite mashed potatoes. The secret is the right flavorings. Use the same ingredients as for mashed potatoes.
- Garlic: First, sauté the garlic to release flavor. If you use an Instant pot, no need to chop it.
- Chicken stock ( low sodium)
- Butter: I recommend to use unsalted butter to be able to control the saltiness.
- Parmesan cheese: Grate cheese by yourself. Any hard cheese will work well ( Cheddar, Gouda, Provolone..).
- Sour cream or cream cheese will work well.
- Cumin powder: It boosts the flavor.
- Ground black pepper
You can make this cauliflower mash vegan or diary free. Sour cream and butter are optional. Adjust the recipe to your personal preferences.
INSTANT POT MASHED CAULIFLOWER
To save time, I usually cook cauliflower in an instant pot.
- Choose “Saute” mode and cook garlic for about 2 minute or until fragrant and slightly browned. Press “Cancel”
- Add cauliflower, cumin powder, chicken stock and black pepper. Close the lid and choose “Pressure Cook”, setting time for 3 minutes. When cooked, do a quick pressure release.
- Transfer to a blender and process with Parmesan cheese and butter.
- Stir in sour cream (optional).
- Garnish with fresh chives.
How to make cauliflower mash ( Stove)
You can steam cauliflower over the saucepan with boiling water or boil it in salted water too. However, keep in mind that cauliflower cooks much faster than potatoes. It takes about 14-15 minutes to steam it or 8-10 minutes to boil. When you can easily pierce it with a knife, it is cooked. Tender cauliflower purees smooth.
CREAMY CAULIFLOWER MASH
After cooking cauliflower, drain it and transfer to a blender. Blend together with garlic, Parmesan cheese, ground black pepper and butter until you achieve the desired consistency. For the smoothest and creamiest mash, a high speed blender is the best option. You may need to blend it in batches (depends on the size of your blender).
Stir in sour cream (optional).
You can mash the cooked cauliflower instead of blending. But, keep in mind, that your mash will be textured and might have cauliflower chunks. First, mash the cauliflower with a potato masher and then add Parmesan cheese, sautéed garlic, butter and sour cream. Adjust salt and pepper.
Don’t allow the cooked cauliflower stand. Mash when it is hot otherwise you will end with watery dish.

Ingredients
- Vegetable oil- 2 tbsp.
- Large Cauliflower head ( cut into florets)- 1 ( 3 pounds/ 1,5 kg)
- Garlic cloves -8
- Chicken stock- 1 ½ cup
- Cumin powder- 1 tsp
- Ground black pepper-⅓ tsp, plus ¼ tsp to garnish
- Butter- 1 tbsp.
- Parmesan cheese- ½ cup
- Sour cream- 1 tbsp.
- Chives (chopped)- 1 tbsp.
Instructions
Instant Pot Mashed Cauliflower
- Choose " Saute" mode and set time for 2 minutes, using "+/-" button.
- Add vegetable oil and garlic cloves and saute until slightly browned.
- Insert a steamer rack inside your Instant Pot and add the cauliflower florets. Season with cumin powder, salt and ground black pepper. Pour the chicken stock into the Instant Pot. Close the lid and set the valve to sealing, then chose "Pressure Cooker ( High)" mode and set time for 3 minutes.
- Once it is cooked, release the pressure, using the quick release function. Open the lid and allow to cool for a few minutes.
- Transfer cauliflower with garlic to a food processor or to a large bowl if you plan to use a potato masher.
- Add Parmesan cheese, butter and ¼ tsp. of ground black pepper. Blend until smooth.
- Stir in sour cream, garnish with chives and Parmesan cheese. Enjoy!
Mashed Cauliflower on the Stove
- Alternatively, you can cook cauliflower on the stove. Simply put cauliflower in a steamer placed over a large pot of boiling water and steam for 15 minutes or until tender. You can boil the cauliflower in salted water as well.
- Saute garlic cloves until fragrant and then blend everything in a blender until smooth and creamy.
- Garnish with chives, Parmesan cheese and serve.
