- 4 skinless chicken breasts approximately 2 pounds or 1 kilogram
- 3 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon dried oregano
- 1½ tablespoons minced garlic cloves about 5 to 6 cloves
- salt and black pepper to taste
- 3 cups cherry or grape tomatoes halved
- ½ red onion sliced
- ¼ cup balsamic vinegar
- 1 tablespoon brown sugar
- 8 slices mozzarella cheese
- 2 tablespoons fresh parsley or basil finely chopped
