Ingredients 

  • 4 skinless chicken breasts, approximately 2 pounds or 1 kilogramโ€‹
  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoningโ€‹
  • ยฝ teaspoon dried oregano
  • 1ยฝ tablespoons minced garlic cloves, about 5 to 6 clovesโ€‹
  • salt and black pepper, to tasteโ€‹
  • 3 cups cherry or grape tomatoes, halved
  • ยฝ red onion, slicedโ€‹
  • ยผ cup balsamic vinegarโ€‹
  • 1 tablespoon brown sugarโ€‹
  • 8 slices mozzarella cheeseโ€‹
  • 2 tablespoons fresh parsley or basil, finely chopped

Instructions 

  • Preheat oven to 425ยฐF (220ยฐC) ยฐF.
  • Place 4 skinless chicken breasts in a 9×13-inch baking dish. Season both sides with 1 teaspoon Italian seasoningโ€‹, ยฝ teaspoon dried oregano, 1ยฝ tablespoons minced garlic cloves, salt and black pepper. Rub the seasonings and garlic evenly over each piece. Drizzle with 3 tablespoons olive oil.
  • Scatter 3 cups cherry or grape tomatoes and ยฝ red onion (sliced) around and underneath the chicken in the baking dish.
  • In a small cup, whisk together ยผ cup balsamic vinegarโ€‹ and 1 tablespoon brown sugarโ€‹. Pour the mixture over the chicken, then flip each breast once to coat both sides well.
  • Transfer the dish to the preheated oven and bake for 20โ€“25 minutes, or until the chicken is fully cooked and no longer pink in the center. Cooking time may vary depending on the thickness of your chicken.
  • Remove the dish from the oven and top each chicken breast with mozzarella. Broil for 4โ€“5 minutes, or until the cheese is melted and bubbly.
