Oven Roasted Potatoes
If you don’t know what to cook for today’s dinner as a side dish, I recommend to give a try to these oven roasted potatoes. It is a simple, fool-proof dish and it pairs pretty well with any meal. From Lemon Garlic Roast Chicken to a classic Meatloaf! Play with seasoning and spices and adapt the recipe to your liking.
You can substitute parsley with fresh dill or coriander. Dried herbs like rosemary, basil, oregano provide a great flavor and can be used.
Adjust the amount of garlic to your taste as well.
what type of potatoes are best for roasting?
Actually any type of potatoes will work well, but I personally prefer Yukon, Russet or Red potatoes. Yukon potatoes are not too starchy and not too waxy, they won’t flake easily at high heat. Red potatoes are another great choice when it comes to roasting. They hold their shape really well during cooking because of their low starch content. Russet potatoes are flaky and starchy and I should say they are the most versatile potatoes.
You can peel the potatoes or roast them with skin-on. I love red potatoes roasted with skin-on. At the same time, I prefer Yukon or Russet potatoes without skin.
HOW TO ROAST POTATOES?
- Cut potatoes into bite-sized pieces and arrange on the baking tray. Season with salt and ground black pepper.
- Combine the minced garlic, parsley and olive oil and pour the mixture over the potatoes. Mix.
- Bake.
How long to roast potatoes in oven?
Roast potatoes at 400°F /200°C for 50-55 minutes until crispy and golden. Make sure you flip them from time to time during roasting. The cooking time will depend on the temperature. Below you can find the temperature and cooking time.
350°F /175°C= 60-75 minutes.
375°F /190°C= 55-65 minutes.
400°F /200°C= 50-55 minutes.
450°F /230°C=35-45 minutes.

Crispy Garlic Roasted Potatoes Recipe
CRISPY GARLIC ROASTED POTATOES
Ingredients
- Yukon gold potatoes/ Russet cut into bite-sized cubes- 2 pound or 1 kg
- Ground black pepper- 1 tsp.
- Salt- as needed
- Olive oil- 3 tbsp.
- Minced garlic- 2 tbsp.
- Fresh parsley- 2 tbsp.

Instructions
- Preheat your oven to 400°F /200°C with the rack in the middle. Brush a baking tray/ sheet with some vegetable oil.
- Arrange potatoes on the tray in a single layer and then season with ground black pepper and salt.
- In a small bowl combine the minced garlic, parsley and olive oil. Mix well.
- Pour the mixture over the potatoes and mix to evenly coat.
- Roast potatoes for 50-55 minutes, flipping from time to time, until they are golden and crisp.
- Remove from the oven and sprinkle with some ground pepper and parsley.
- Serve immediately!
