This particular recipe for shrimp cakes is so fresh for a Springtime dinner party. It goes very well alongside nearly any dish. Shrimp cakes are light enough to add protein to an otherwise vegetarian meal but without being overly filling. The other nice thing about serving a vegetarian entrée with shrimp cakes is being able to offer food for pescetarians and vegetarians without anyone feeling deprived.
A Do-able Dish for New Cooks
Shrimp is available year-round since it is easy to get fresh most places and thaws beautifully if you keep some frozen on-hand to make these shrimp cakes on the fly. Shrimp is not too difficult to make even for a beginner cook as it comes out quite succulent without having to fuss over it much. This is especially true when you go with a dish requiring chopped shrimp since minor flaws disappear during preparation.

Description
Easy and delicious Shrimp cakes that go really well with almost everything!
Ingredients
- Raw shrimp (peeled and deveined)-1 kg / 2.2 pound
- Cooked rice- 1 cup
- Garlic cloves- 4
- Onion- 1 medium
- Red Bell pepper ( chopped)-¼ cup
- Japelano sauce- 1 tsp.
- Panko breadcrumbs- ¾ cup
- Lemon zest- 1 tsp.
- Fresh cilantro leaves- ¼ cup
- Eggs- 2, large
- Salt- to taste
- Black pepper- to taste
- Vegetable oil- 3-4 tbsp. ( for frying)
- FOR SERVING
- Lime wedges- as needed
- Sour cream- as needed
Instructions
- Using a meat grinder, grind the raw shrimp, cooked rice, garlic, onion, red bell pepper and fresh cilantro.
- Add the Panko breadcrumbs, japelano sauce, black pepper, salt and lemon zest, then mix well to combine.
- Heat a large non-stick pan over medium heat and add 4 Tbsp oil. When the oil is hot , add the shrimp mixture, using an ice cream scoop. Pat down shrimp cakes with the back of your scoop to flatten slightly.
- Fry shrimp cakes about 8 minutes ( 4 minutes per each side) until browned.
- Serve immediately with sour cream and lime wedges.
