ROASTED ASPARAGUS

My favorite method to cook asparagus is roasting. I think it is the easiest way and provides the greatest flavor. You get crispy and cheesy asparagus that is packed with garlic flavor! It is a one sheet pan dish, you put everything on a baking sheet and allow your oven do this job for you. How does it sound? And trust me, even if you are not a huge fan of asparagus, you are going to fall in love with vegan, low carb dish. The Mozzarella cheese topping brings it to the next level.

INGREDIENTS FOR CHEESY GARLIC ASPARAGUS 

Asparagus spears: Always use fresh asparagus for this recipe. Asparagus should be bright green without wrinkles as they indicate of old age. Stalks must be firm and never mushy.
Olive oil: The recipe calls for olive oil, but even melted butter can be used.
Garlic cloves: Please mince your garlic! If you chop it, you will most likely be eating very pungent and raw garlic. Use a microplane grater to get the best result.
Mozzarella cheese: Both shredded and mozzarella slices will work. Use approximately 6-7 slices to substitute 1 ¼ cup of shredded Mozzarella cheese.

How to trim asparagus?

Arrange a whole bunch of asparagus spears in a row on the cutting board. Using a sharp knife, cut right where the green turns into white.

HOW TO ROAST ASPARAGUS

  • Preheat your oven to 220°C/ 425°F.
  • Wash asparagus and remove the woody and tough ends, using a sharp knife.
  • Mix together minced garlic, olive oil, ground pepper and salt in a small bowl. Drizzle asparagus with this mixture.
  • Roast asparagus for about 10 minutes, uncovered. Remove from the oven, top with Mozzarella cheese and broil for another 4-5 minutes or until cheese completely melts.

HOW LONG DOES ASPARAGUS TAKE TO COOK IN THE OVEN?

The cooking time will depend on the size of asparagus. It usually takes 10-15 minutes for medium-sized asparagus to be roasted to perfection at 220°C/ 425°F. If your asparagus is extra-large, roast for 15-16 minutes.

Ingredients

  • Asparagus spears woody ends removed- 1 pound / 500 g
  • Olive oil- 3 tbsp.
  • Garlic cloves minced- 4
  • Ground black pepper- 1 tsp.
  • Salt- ½ tsp. or as needed
  • Mozzarella cheese shredded- 1 ¼ cup

Equipment

  • Baking tray
  • Pepper Mill
  • Sharp knife

Instructions

  • Preheat your oven to 220°C/ 425°F  with the rack in the middle of the oven. Spray a baking sheet with a nonstick cooking spray.
  • Remove woody ends of asparagus and put on the baking sheet. Keep aside.
  • Mix together olive oil, minced garlic, ground black pepper and salt. Pour the mixture over the asparagus and coat evenly.
  • Bake  for 10-12 minutes or until beginning to become tender. It will have vibrant green color.
  • Remove from the oven and spread mozzarella cheese on the top. Return to the oven and broil for another 4-5 minutes or until the cheese melts and becomes slightly golden.
  • Serve immediately.
