Creamy Tuscan Butter Shrimp
Ingredients
- 2 tablespoons unsalted butter
- 1 teaspoon flour
- 1 tablespoon garlic, minced
- 1 pound shrimp or prawns, tails on or off
- 1 cup heavy/whipping cream
- 1/2 teaspoon lemon juice
- 1/4 teaspoon Italian seasoning
- 1/4 cup sun-dried tomato strips in oil, drained
- 1/4 cup parmesan cheese grated
- 1-2 cups packed fresh baby spinach
- Fresh basil cut into thin strips
- Salt & pepper to taste
Instructions
- Melt the butter in a large skillet over medium-high heat.
- Stir in the flour and cook for about a minute until smooth.
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the cream, lemon juice, Italian seasoning, and sun-dried tomatoes. Let it simmer for 1-2 minutes. Lower the heat if it starts bubbling too much.
- Add the shrimp and cook for about 4 minutes, until theyโre cooked through and the sauce thickens slightly. Be careful not to overcook the shrimp.
