Ingredients 

  • 2 tablespoons unsalted butter
  • 1 teaspoon flour
  • 1 tablespoon garlic, minced
  • 1 pound shrimp or prawns, tails on or off
  • 1 cup heavy/whipping cream
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup sun-dried tomato strips in oil, drained
  • 1/4 cup parmesan cheese grated
  • 1-2 cups packed fresh baby spinach
  • Fresh basil cut into thin strips
  • Salt & pepper to taste

Instructions 

  • Melt the butter in a large skillet over medium-high heat.
  • Stir in the flour and cook for about a minute until smooth.
  • Add the garlic and cook for 30 seconds until fragrant.
  • Stir in the cream, lemon juice, Italian seasoning, and sun-dried tomatoes. Let it simmer for 1-2 minutes. Lower the heat if it starts bubbling too much.
  • Add the shrimp and cook for about 4 minutes, until theyโ€™re cooked through and the sauce thickens slightly. Be careful not to overcook the shrimp.
  • Add the Parmesan, spinach and basil, and cook for another 2 minutes.
  • Season with salt and pepper to taste.
  • Serve immediately. For extra flavor, squeeze some lemon juice on top or sprinkle with grated parmesan if desired.
