โœ…Ingredient Notes

  • Shrimp: Go for large shrimp โ€“ fresh or frozen both work. Leaving the tails on adds presentation flair, but feel free to take them off for easier eating.
  • Lemon Juice: Freshly squeezed lemon juice makes all the difference, adding a bright, zesty flavor. Youโ€™ll want extra lemon wedges for a finishing touch when serving.
  • Chicken Stock: This adds depth to the butter sauce. White wine also works if youโ€™re looking for a more traditional scampi flavor.
  • Butter: Unsalted butter lets you control the saltiness, and melting it ensures a rich, even coating. Youโ€™ll use some for the shrimp and the rest for the breadcrumb topping.
  • Panko Breadcrumbs: These Japanese-style breadcrumbs give you a perfectly crunchy topping. Regular breadcrumbs can work too, but Panko is best for a golden, crispy finish.
  • Garlic: Minced fresh garlic is key here for that punch of flavor. Pre-minced garlic can work in a pinch, but fresh is best for maximum flavor.
  • Parmesan Cheese: Just sprinkle it into the breadcrumb mixture for a delicious boost.
  • Red Pepper Flakes: Use as much or as little as you like! They add a subtle kick that balances the buttery richness of the dish.
  • Parsley: Freshly chopped parsley brightens up the flavors and adds a pop of color. Save a little extra for a fresh garnish at the end!

๐Ÿ”ชHow to Make Baked Shrimp Scampi with Bread Crumbs

Preheat your oven to 425ยฐF (220ยฐC).

Mix shrimp with lemon juice, chicken stock, 2 tablespoons melted butter, salt, and pepper in a skillet or baking dish. Arrange in a single layer.

Combine the remaining melted butter with breadcrumbs, garlic, Parmesan, red pepper flakes, and parsley.

Sprinkle the topping over the shrimp and bake for 8-12 minutes, until bubbling.

Broil for 1-2 minutes for a crispy finish.

Add parsley, a drizzle of lemon juice, and serve with lemon wedges.

๐Ÿ‘จโ€๐ŸณPro Tips

  • Use Extra-Large Shrimp: Larger shrimp retain more juiciness when baked and have a better texture for this dish. If using smaller shrimp, reduce the baking time by a couple of minutes to avoid overcooking.
  • Dry the Shrimp Well: Pat the shrimp dry with paper towels before seasoning. This helps the garlic butter sauce stick better and ensures the bread crumbs stay crisp.
  • Toast the Breadcrumbs First: For even more crunch, lightly toast the Panko breadcrumbs in a small skillet with a bit of melted butter before sprinkling them over the shrimp. This gives the dish an extra crispy, golden topping.
  • Broil Carefully: Keep a close eye when broiling for a crispy top โ€“ breadcrumbs can burn quickly. Aim for 1-2 minutes max, just until you see that golden color.
  • Make It a Meal: Serve over linguine or angel hair pasta, or spoon it over rice to soak up all the delicious garlic butter sauce. You can also pair it with steamed veggies for a lighter side.

๐Ÿ—„๏ธStorage

Got leftovers? Store in an airtight container in the fridge for up to 3 days. To reheat, pop it in the oven at 350ยฐF until warmed through โ€“ this keeps the breadcrumbs nice and crispy. Perfect for a quick, delicious next-day meal!
