Thinking of low carb diet options to help your body get bikini ready? Creamy Garlic Shrimp comes highly recommended, not only because it is scrumptious but because I do not find it as bland and boring like many other low card diets. I am really obsessed with seafood because of the wide range of dishes I can prepare with them. There is always something to be made. I decided to prepare this shrimp dish because it’s been a while I treated myself to some palatable seafood. Every buttery, juicy bite you take will literally take you to cloud 9. Not only is this recipe easy to make, it takes a very short time to prepare. In less than a quarter of an hour, you will find yourself devouring a huge plate of this spicy, creamy garlic shrimp.
COOKING SHRIMP
Just before I commence cooking, I always make sure that the shrimps are properly deveined and shelled. I prefer the shrimps with tails on because I want a picturesque meal, but you can leave them off. Cleaning out your shrimps makes the recipe very easy. I season the shrimps with black pepper and salt to make them taste really nice, the garlic does the extra work to make the delicacy flavorful. For the sake of freshness, I squeeze lemon juice myself. I avoid store bought lemon juice at all cost.
This shrimp recipe is my own ‘happy version’ of a Mediterranean diet. With all the olive oil, creamy Garlic butter sauce, succulent shrimps, Pecorino cheese, tangy lemon and sprinkling of freshly chopped parsley. Who wouldn’t feel happy? This meal is a melting pot of flavors. Cook shrimp in a fairly large skillet or pan to prevent the seafood from sticking to the pan.
Sometimes, I like to triple my recipe especially on those days when I want to have a few pals over and plan to serve a light-as-air yet satisfying appetizer. You wouldn’t want to be tagged a ‘bad host’ when all the heavenly shrimps vanish from plates in less than 5 minutes.
SERVING SUGGESTIONS
After cooking, I serve this garlicky, lemony, buttery shrimp with some steamed vegetables, a bed of pasta or some boiled with rice. Sometimes, I enjoy the sauce with oven fresh baguette or crostini. I also find the creamy garlic shrimps highly enjoyable when I sprinkle some chopped parsley on them and just eat. Lip-smacking!

Ingredients
- Shrimp ( peeled, deveined & tails on) - 700 gm / 1.5 lb
- Vegetable oil- 2 tbsp.
- FOR THE CREAM SAUCE
- Fresh grated Pecorino Romano cheese*- ½ cup
- Unsalted butter- 1 tbsp.
- Vegetable oil- 1 tbsp.
- Garlic cloves ( finely chopped)- 5-6
- Chicken/Vegetable stock- ½ cup
- Half & Half cream- 1 ½ cup
- Fresh lemon juice- 1 tbsp.
- Peperoncino ( Italian red chili peppers)- 3-4, optional
- Ground black pepper- as needed
- Salt- to taste
- FOR GARNISH
- Fresh parsley ( chopped)- 1 tbsp.
- Lemon wedges- as needed
Instructions
- In a large pan heat 2 tbsp. vegetable oil, add shrimp, season with salt and black pepper and cook for 4 minutes ( 2 minutes per side) or until shrimp are pink and opaque. Transfer to a plate.
- In the same pan melt the butter, add vegetable oil, garlic and sauté until fragrant but not browned (about 20 seconds) over medium heat. Pour in the chicken stock, lemon juice and allow to simmer for 1-2 minutes. Add in half & half cream; reduce the heat to low-medium and allow to simmer, stirring occasionally.
- Stir in the grated cheese, peperoncino peppers and and allow sauce to simmer until the cheese melts and sauce is thick. Return the shrimp back into the pan, sprinkle with the chopped fresh parsley. Adjust salt and pepper.
- Serve with lemon wedges.
Notes
* if there’s no Pecorino Romano, use Parmesan.
