Easy Chicken Orzo
My kids are in love with this little rice-shaped orzo pasta. It is a staple side dish in our house. Orzo pasta is incredibly versatile. I use it for Mediterranean soups and in salads. The texture of orzo pasta is truly amazing. It is tender, chewy and firm at the same time.
Orzo pasta with chicken is a real hit! Best of all, it is very easy to make it and no dirty dishes, all in one skillet.
First, sear the lemon slices, then sear the chicken, remove the chicken breasts to large plate, cook orzo until it absorbs the broth and add the chicken breast back to the cooked pasta.
Chicken Orzo Ingredients
- Vegetable oil
- Lemon
- Garlic butter
- Chicken breasts. I am in love with chicken breasts, but even chicken thighs will work well for this recipe.
- Onion powder
- Garlic powder
- Italian seasoning. Don't have it in your kitchen? Substitute with ¼ tsp. of basil, thyme, rosemary and oregano.
- Orzo pasta
- Garlic cloves
- Chicken broth
- Black olives
- Pecorino Romano/Parmesan cheese
- Fresh parsley
- Juice of 1 lemon

ONE SKILLET LEMON CHICKEN AND ORZO
Ingredients
- Vegetable oil- 4 tbsp.
- Lemon sliced -1
- Garlic butter- 2 tbsp.
- Chicken breasts-700 gm/ 1.5 pound
- Onion powder- 1 tsp.
- Garlic powder-1 tsp.
- Italian seasoning- 1 tsp.
- Salt - as needed
- Orzo pasta- 1 cup
- Garlic cloves finely chopped-4
- Chicken broth- 2 ¾ cup
- Black olives sliced-2 tbsp.
- Pecorino Romano/Parmesan cheese- 2 tbsp.
- Fresh parsley finely chopped-1 tbsp.
- Juice of 1 lemon.
Instructions
- Heat vegetable oil in a large skillet. Sear the lemon slices until golden for 2 minutes on each side over medium high heat. Transfer to a plate.
- Season the chicken all over with onion powder, garlic powder, salt and Italian herbs.
- In the same skillet melt the garlic butter, add the chicken breast and sear for 16 minutes ( 8 minutes per side) or until golden. Transfer to a plate with lemon slices.
- Add the garlic and orzo to the skillet and cook until garlic is fragrant, about 1-2 minutes.
- Add the chicken broth and bring to a boil over medium heat, stirring occasionally.Reduce the heat and allow to simmer for 15 min or until all of the water is absorbed.
- Add Pecorino Romano cheese , black olives, lemon juice and parsley. Mix well.
- Return the chicken breasts to the skillet.
- Serve immediately.
