The name “marry me chicken” comes from the idea that this dish is so good, you’d propose to whoever made it for you. And honestly? With this creamy, garlicky, sun-dried tomato situation happening, we get it. The orzo cooks right in the skillet with the chicken and sauce, soaking up all those flavors. No draining pasta, no extra pots – just one pan and about 30 minutes until dinner’s on the table.

Why You’ll Love This Marry Me Chicken Orzo

  • Everything cooks in one pan. The chicken, the orzo, the sauce – it all happens in the same skillet. Less cleanup, more flavor.
  • Ready in 30 minutes. From chopping to eating, you’re looking at half an hour. Perfect for weeknights when you want real food, fast.
  • Creamy and indulgent. That Parmesan cream sauce is everything. It’s rich and dreamy without being heavy.
  • Sun-dried tomatoes are the secret. They add this sweet, tangy, concentrated tomato flavor that makes the whole dish taste gourmet.
  • Totally customizable. Add more veggies, swap the spinach for kale, use different cheese – it’s very forgiving.

You’ll Need

How to Make Marry Me Chicken Orzo

  • Cook the seasoned chicken in olive oil until lightly golden; set aside.
  • Sautรฉ garlic and sun-dried tomatoes in the same pan.
  • Stir in orzo and toast briefly.
  • Add broth and cream, cover, and simmer until the orzo is tender.
  • Stir in spinach and Parmesan, then return the chicken.
  • Finish with lemon juice and serve warm.

Helpful Tips

  1. Use sun-dried tomato oil for cooking. Instead of plain olive oil, use the oil from the jar of sun-dried tomatoes. It’s already infused with flavor.
  2. Stir the orzo while it cooks. Check it once or twice and give it a stir to prevent sticking and ensure even cooking.
  3. Fresh Parmesan is key. Pre-shredded cheese has anti-caking agents that prevent smooth melting. Grate it fresh for the creamiest sauce.
  4. Add spinach in batches if needed. It looks like a lot at first, but it wilts down dramatically. Just keep stirring and it’ll all fit.
  5. Adjust the consistency. If the sauce is too thick, add a splash more broth or cream. If it’s too thin, let it simmer uncovered for a minute or two.
  6. Don’t skip the lemon. That fresh squeeze at the end is what makes the dish feel balanced and not too heavy.

Substitutions and Variations

  • Use chicken thighs. Boneless, skinless thighs are juicier and more forgiving if slightly overcooked. Cut them into cubes just like the breasts.
  • Make it dairy-free. Use coconut milk instead of heavy cream and skip the Parmesan, or use dairy-free Parmesan.
  • Swap the greens. Kale, arugula, or chopped Swiss chard all work instead of spinach.
  • Add more veggies. Throw in some mushrooms, zucchini, or bell peppers along with the sun-dried tomatoes.
  • Make it spicy. Add ยผ-ยฝ teaspoon red pepper flakes with the garlic for a kick.
  • Add fresh herbs. Stir in some chopped fresh basil or parsley at the end along with the lemon juice.

Leftovers and Storage

  • We recommend eating it right away for the best texture, but you can refrigerate leftovers in an airtight container for 2-3 days.
  • Reheat gently. The orzo will absorb more liquid as it sits, so add a splash of chicken broth or cream when reheating. Heat in a skillet over medium-low, stirring often, or microwave in 1-minute intervals, stirring between.
  • Freezing. We wouldn’t freeze this due to the cream and cheese – the texture won’t be the same when thawed. It’s best enjoyed fresh.
  • Make ahead. You can prep the ingredients ahead (cut the chicken, mince the garlic, measure everything out), but the dish itself is best cooked and served the same day.

FAQs

Can I use a different type of pasta?

Orzo works best because it cooks quickly in the sauce and has the right texture for this dish. But you could use other small pasta shapes like ditalini, acini di pepe, or even broken spaghetti. Cooking times may vary, so check the package directions and taste for doneness.

What if I don’t have sun-dried tomatoes?

Sun-dried tomatoes add a lot of flavor, but you could substitute with cherry tomatoes (halved) or even skip them and add more spinach or other veggies. The dish will taste different but still good.

Can I make this with rotisserie chicken?

You can, but add it at the very end just to warm through. Rotisserie chicken is already cooked, so it just needs to be heated. You’ll lose some of the flavor from browning the chicken yourself, though.

How do I make this healthier?

Use half-and-half or milk instead of heavy cream (the sauce will be thinner), add more vegetables, or use whole wheat orzo if you can find it.

Ingredients

  • 2 tablespoons olive oil, or oil from the sun-dried tomatoes for extra flavor
  • 1ยฝ lbs boneless, skinless chicken breast, cut into cubes
  • 2 teaspoons Italian seasoning
  • 2 teaspoons paprika, or smoked paprika
  • ยฝ teaspoon kosher salt, adjust to taste
  • 1/2 teaspoon ground black pepper
  • 4-5 cloves garlic, minced
  • ยพ cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup orzo
  • 2 cups chicken broth
  • ยฝ cup heavy cream, or coconut milk
  • 3-4 cups fresh spinach, or 1 full bag
  • 1/2 cup freshly grated Parmesan cheese
  • Juice of 1 lemon, to finish
  • Fresh basil, to garnish

Instructions

  • Heat the olive oil (or sun-dried tomato oil) in a large, deep skillet over medium-high heat. Add the chicken, season with Italian seasoning, paprika, salt, and black pepper, and cook for 4โ€“5 minutes until lightly golden and just cooked through. Transfer the chicken to a plate and set aside.
  • Reduce heat to medium. Add the garlic and sun-dried tomatoes to the same skillet and cook for 30โ€“60 seconds until fragrant, scraping up any browned bits from the pan.
  • Stir in the orzo and cook for 1 minute, stirring constantly, to lightly toast it and coat it in the flavorful oil.
  • Pour in the chicken broth and heavy cream. Stir well, bring to a gentle simmer, then cover and cook for 8โ€“10 minutes, stirring once or twice, until the orzo is tender and most of the liquid is absorbed.
  • Stir in the spinach and Parmesan cheese until the spinach wilts and the sauce becomes creamy. Return the chicken to the pan and stir to combine.
  • Remove from heat and squeeze in lemon juice to taste. Adjust seasoning if needed. Garnish with fresh basil. Serve warm with extra Parmesan on top.
