Aren’t thirty-minute recipes so much easier? Many people are still stuck in the 70s, thinking a great dinner has to take hours to prepare. The truth is many great dishes can be made in short order, even when you’re cooking from scratch. Here, we’re making restaurant-quality dinner for a fraction of the price and time.
Lemon Garlic Chicken Ingredients
You will need chicken breasts, olive oil, salt, pepper, Italian seasoning, flour, Parmesan cheese, eggs, garlic, lemon juice, chicken stock, butter and fresh herbs of your choice.
How to Make Parmesan Crusted Lemon Garlic Chicken
- Cut chicken breasts in half horizontally to make them thinner for even cooking.
- Dip in the egg wash.
- Dredge in the parmesan flour mixture.
- Fry the chicken fillets until crispy, about 4-5 minutes per side. Cook the chicken over medium-high heat to prevent the cheese from burning.
- Make the lemon garlic sauce.
Lemon Butter Sauce
Can you believe this lemon butter sauce only takes about five minutes to prepare? The combo of tangy lemon, savory butter, and the prominent, aromatic taste of garlic is simply divine.
You won’t believe how easy it is to make this sauce.
First, sauce your garlic and rosemary sprigs in butter until they are aromatic and fragrant. This will only take a minute at most, and you’ll know as soon as the aroma wafts up from the pan up to you.
Whisk in your lemon juice, chicken broth, seasoning, and pepper, ensuring an evenly textured mix. You should be going for an evenly colored sauce. Let this sauce cook over a medium heat for 1-2 minutes, and you’ll have a tasty, indulgent lemon sauce ready to go.
If you don’t like the strong lemon flavor in this recipe, you can always reduce the amount of lemon juice in it. On the other hand, if you can’t get enough citrus, use a little more lemon juice. You could even add some lemon zest to the pan as you’re sauteeing your garlic and butter for that extra lemony kick.
Can I Make Lemon Chicken Without Parmesan Crust?
While you can, it’s not going to be as tasty. The crust is a big part of the flavor of this dish, and depending on the type of parmesan you’re using (we always recommend parmigiano-reggiano, the king of cheeses) omitting the crust may not be that much healthier than leaving it on.
Can You Use Chicken Thigh Instead of Breast?
You can definitely swap the chicken breast out for thigh if you want! Since thigh is fattier, it will be a little softer, and won’t cut into the uniform, delicate strips you’d expect from chicken breast. However, it will taste just as good. You can use tenderloin as well if you want.
To ensure that your chicken thigh is cooked properly, your cooking time may differ from the recipe. You don’t want to mess around when it comes to cooking chicken, so we recommend using an instant-read meat thermometer. Your chicken will be cooked when the thermometer reaches 165 degrees F.
Can You Add Vegetables?
Yes, you can add veggies to the skillet for this meal. In fact, we’d encourage it! It’s great to consume a diet high in vegetables, particularly green ones. As you’d expect, the brighter, crunchier vegetables are best for this dish. We recommend asparagus, green beans, and zucchini with this. They will taste great with the lemon sauce thanks to their subtler sweet taste and add some crunch and snap to your dinner.
Can I Make this Dinner Ahead?
Even though this dinner is a genuine time-saver, you might want to make life even easier for yourself and prepare it ahead of time. That’s OK! You can shave a couple of minutes off your cooking time by slicing your chicken, adding it to the egg mixture, covering it and refrigerating it until it’s time to cook. In addition to saving you some time later on, it has the added benefit of marinating the chicken and softening it up so you’ll have the most juicy and tender chicken breast.
When you’re ready, simply continue with the recipe as is.
What To Serve With Lemon Chicken
There are plenty of options for serving this awesome dinner. You can always go with the tried and true classic of mashed potato, for example. In fact, any potato side at all would be perfect, including baked potatoes, which will soak up your sauce very nicely.
You could try eating this dish with your favorite pasta, or get yourself a generous hunk of crusty naan bread to mop up any sauce left once you’ve polished off your chicken. A bright, fresh salad like Fattoush on the side would be great, too. This meal goes particularly well with Caesar and Greek salads, especially if you’ve a nice sweet vinaigrette handy.
