Ingredients

  • 4 LARGE chicken breasts
  • 1 tablespoon garlic grated, using microplane
  • 1 tablespoon lemon pepper seasoning
  • Salt and pepper as needed
  • 12-16 asparagus stalks trimmed*
  • 8 slices fresh mozzarella cheese or provolone
  • 1 tablespoon garlic powder
  • 1 ½ teaspoons smoked paprika
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 425°F.
  • Prepare the Chicken: Slice each chicken breast in half lengthwise, leaving one side intact to form a pocket. Season the inside with salt, grated garlic and lemon pepper seasoning. Place a slice of mozzarella cheese and 3-4 asparagus stalks inside each pocket, then fold the chicken to enclose the filling.
  • Season the Outside: Sprinkle the outside of the chicken with salt, pepper, garlic powder, and smoked paprika.
  • Sear the Chicken: Heat olive oil in a large oven-safe skillet (cast iron works great) over medium-high heat. Place the chicken top-side down in the skillet and sear for 3-5 minutes, until golden brown and easy to lift. Flip and sear the other side for another 3-5 minutes.
  • Bake: Cover the skillet with foil and transfer it to the preheated oven. Bake for 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  • Rest and Serve: Remove the skillet from the oven and let the chicken rest, covered, for 5 minutes.
  • Serve and enjoy!

Notes

*You’ll usually need 3-4 asparagus spears per chicken breast, depending on the size of both the asparagus and the chicken breast. Make sure the chicken breast is large enough to wrap around the asparagus securely. If the asparagus spears are thick, you might use fewer; if they’re thin, you can add more.
Store in an airtight container in the refrigerator for up to 3 days.
