Delicious Middle Eastern broad bean dip-Foul Mudammas! It is made of cooked fava beans, flavored with garlic and lemon juice. Ready in 10 min. Vegan and GF.
In the book "A Book of Middle Eastern Food", Claudia Roden, the chef and author of several cookbooks of the Middle Eastern cuisine, writes the following about the Egyptian national dish: "foul mudammas-'the' national dish of Egypt" and is a meal that is "pre-Ottoman and pre-Islamic.
Her book has a recipe that calls for dried fava ((“full medames” - fava beans), soaked and then cooked with minced garlic, served with olive oil, lemon juice and hard-boiled eggs.
WHAT ARE FAVA BEANS?
Fava beans are also known as broad beans, are eaten everywhere in the Middle East. They have flavors of earthiness, sweetness and spice and are loaded with vitamins, protein , fiber and minerals.
They were widely cultivated in ancient Egypt. The Egyptians put dried beans in the tombs of the dead people.
Presumably the word "medammis" is of Coptic origin and means "internal", because the beans were cooked in pots.
The method of cooking fava beans is mentioned in the Jerusalem Talmud, and this once again proves that fava beans were eaten in the countries of the Middle East, starting from the fourth century.
Nowadays there are lots of ways to garnish this dish but the recipe is almost same as many centuries ago.
HOW TO MAKE FOUL MUDAMMAS
You will need the following ingredients:
- Brown broad beans ( knows as Fava beans in the Middle East)
- Tomato
- Garlic
- Parsley
- Lemon juice
- Green chili
- Olive oil
Crush beans, using a mortar or a fork, add the garlic, lemon juice and chili and mix. The Foul Mudammas is almost ready!
HOW TO MAKE FOUL MUDAMMAS
FOUL MUDAMMAS IN 10 MIN
Ingredients
- Brown broad beans - 1 can 450 gm / 7 oz
- Juice of 1 lemon
- Medium tomato diced-1
- Garlic clove finely chopped- 1
- Green chili chopped- 1
- Fresh parsley roughly chopped- 1 tbsp.
- Olive oil- as needed to drizzle
- Salt - to taste
Instructions
- Empty the can of fava beans into a saucepan with liquid and heat for about 5-7 minutes over medium heat or until beans are warm. You might need to add a little more liquid to keep it wet.
- Once the beans are hot, crush them with a fork. Add the garlic, lemon juice and green chili and mix. Add salt as needed.
- Top with the diced tomato and parsley. Drizzle with olive oil.
- Enjoy!
