Helpful Tips
- For best texture and crunch, use Persian cucumbersโtheyโre less watery and have thinner skin, which makes them ideal for fresh salads like this.
- If youโre not serving right away, salt the cucumbers and let them sit for 10โ15 minutes to draw out moisture. Just blot them dry before mixing.
- Add lemon zest for extra citrusy flavor.

- Top with toasted pine nuts or almonds for extra crunch.
What to serve it with
This salad is perfect on its own or as a side. We love it with:
- Warm pita or flatbread
- Grilled chicken, lamb, or fish
- A simple grain bowl or roasted veggie platter
Leftovers and storage
Store leftovers in an airtight container in the fridge for up to 2 days. The cucumbers may soften a little, but the flavors deepen as it sits. Just give it a quick stir before serving. We donโt recommend freezing due to the yogurt.

โFAQs
Yes! It keeps well in the fridge for up to 2 days. For the best texture, salt and drain the cucumbers if youโre making it in advance.
You can, but whole milk Greek yogurt gives the salad a richer, creamier texture.
Avoid adding water, and salt the cucumbers if youโre prepping ahead. This helps reduce excess moisture.
