Ingredients

  • 2 pounds large shrimp peeled deveined and tails on or off
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons chicken stock
  • 6 tablespoons unsalted melted butter divided
  • Salt and pepper to taste
  • cup Panko breadcrumbs
  • 2 tablespoons garlic cloves minced
  • 2 tablespoons parmesan cheese grated
  • ½ teaspoon red pepper flakes crushed or more, to taste
  • ¼ cup fresh parsley leaves finely chopped, divided
  • Lemon wedges to serve

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the Shrimp: In a skillet or baking dish, combine the shrimp, lemon juice, chicken stock, 2 tablespoons of melted butter, salt, and pepper. Mix well to coat the shrimp evenly. Optional: Arrange the shrimp in a single layer, starting from the outer edge and working towards the center. Set aside.
  • Make the Breadcrumb Topping: In a small bowl, combine the remaining melted butter, breadcrumbs, garlic, parmesan cheese, red pepper flakes, and 2 tablespoons of chopped parsley. Mix until well combined.
  • Add the Topping and Bake: Sprinkle the breadcrumb mixture evenly over the shrimp. Bake for about 8-12 minutes, or until the shrimp are just cooked through and the dish is hot and bubbling.
  • Broil for a Crispy Finish: Change the oven setting to broil or grill and cook for an additional 1-2 minutes, until the top is crispy and golden.
  • Garnish with the remaining parsley, drizzle with a bit of lemon juice, and serve with lemon wedges on the side.

Notes

Store in an airtight container in the fridge for up to 3 days. To reheat, pop it in the oven at 350°F until warmed through – this keeps the breadcrumbs nice and crispy. Perfect for a quick, delicious next-day meal!
