Instructions
Preheat your oven to 425°F (220°C).
Prepare the Shrimp: In a skillet or baking dish, combine the shrimp, lemon juice, chicken stock, 2 tablespoons of melted butter, salt, and pepper. Mix well to coat the shrimp evenly. Optional: Arrange the shrimp in a single layer, starting from the outer edge and working towards the center. Set aside.
Make the Breadcrumb Topping: In a small bowl, combine the remaining melted butter, breadcrumbs, garlic, parmesan cheese, red pepper flakes, and 2 tablespoons of chopped parsley. Mix until well combined.
Add the Topping and Bake: Sprinkle the breadcrumb mixture evenly over the shrimp. Bake for about 8-12 minutes, or until the shrimp are just cooked through and the dish is hot and bubbling.
Broil for a Crispy Finish: Change the oven setting to broil or grill and cook for an additional 1-2 minutes, until the top is crispy and golden.
Garnish with the remaining parsley, drizzle with a bit of lemon juice, and serve with lemon wedges on the side.
Notes
Store in an airtight container in the fridge for up to 3 days. To reheat, pop it in the oven at 350°F until warmed through – this keeps the breadcrumbs nice and crispy. Perfect for a quick, delicious next-day meal!
