The Best Chicken Parmesan (parmigiana) with an incredibly delicious coating, topped with a flavorful tomato sauce and mozzarella cheese baked until melted and bubbly!
Ingredients
Chicken
- Large eggs-2
- Garlic cloves (minced)- 1 tbsp.
- Fresh parsley ( finely chopped)- 2 tbsp.
- Salt and ground black pepper- to taste
- Chicken breasts -6
- Italian bread crumbs- 1 1/3 cup
- Fresh grated Parmesan cheese- 1/2 cup
- Onion powder- 1 tsp.
- Vegetable oil- 1/4 cup for frying
The Sauce
- Olive oil- 1/4 cup
- Onion ( finely chopped)-1
- Garlic cloves (minced)- 1 tbsp.
- Pasta sauce- 17 ounces ( 500 g)
- Sugar- 1 tsp.
- Italian herb mix - 1 tsp.
- Salt and pepper- as needed
The Topping
- Mozzarella cheese ( sliced)- 10 ounces ( 300 g)
- Parmesan cheese ( shredded)- 1/3 cup
- Basil leaves ( chopped)- 2 tbsp.
Instructions
Chicken:
- Preheat your oven to 430°F (220°C) with the rack in the middle of the oven. Grease a large baking tray ( that will accommodate 6 chicken breasts) with a cooking spray. Keep aside.
- In a large bowl combine eggs, garlic and parsley. Season the mixture with salt and pepper. Place each chicken breast into the egg mixture and coat evenly. Cover the bowl with a plastic wrap and allow to marinate for 10 minutes. To achieve a deeper flavor, marinate chicken overnight.
- Just before cooking the chicken, mix bread crumbs, Parmesan cheese and onion powder in another shallow dish. Take one chicken breast and dip into the Parmesan-breadcrumbs mixture, coating every inch. Repeat with the remaining breasts.
- Heat vegetable oil in a large skillet over medium high heat. Once it is hot, add chicken and fry until golden brown , about 10 minutes ( 5 minutes per side). Transfer the chicken on prepared baking tray.
Sauce:
- In the same skillet/ non stick pan heat olive oil over medium heat. Saute onion until transparent, about 2 minutes. Add the minced garlic and cook until fragrant, about 20-30 seconds.
- Pour the pasta sauce into the skillet and mix. Season with Italian herb mix, sugar, salt and pepper. Mix well and cook 1-2 minutes. Remove from the heat when the sauce is about to bubble. Adjust seasoning to your liking.
Assemble:
- Top each chicken breast with about 1/2 cup sauce. Place 2-3 slices of mozzarella cheese and 2 tbsp. of shredded Parmesan cheese. Sprinkle with the chopped basil leaves.
- Bake for 20-25 minutes or until chicken is cooked through and cheese is melted.
- Serve with pasta, mashed cauliflower, steamed broccoli or roasted asparagus.
