Homemade Almond milk is much better than the store-bought almond milk. Once you make it at home, you will never buy it again. It is more affordable, tastes better and super easy to make!
Even the leftover pulp can be used to make almond cookies, crackers or even hummus.
How to Make Almond Milk
It is very easy to make almond milk at home. First, you need to soak raw almonds in COLD water overnight or for 2-3 days. I found that the longer I soak almonds the creamier and richer in taste my almond milk is. In case you crave dairy-free milk and don’t want to wait for 1 day, simply soak almonds in HOT water for 1-2 hours. Drain the soaked almonds.
Next, you will grind them together with fresh drinking water, dates, vanilla extract, salt and vanilla power sugar. For any flavored milk, add ½ cup of berries or fruit of your choice. For example, for strawberry milk, I will blend almonds, strawberries, dates, salt, vanilla together. You can easily adjust the sweetness by adding more or less dates. For chocolate milk, stir in 2 tbsp. of cocoa. I recommend to blend everything for at least 2-3 minutes to get the most of the almonds.
Next, pour the milk through cheesecloth or nut milk bag to strain out the pulp. The final result is silky and creamy milk. The leftover pulp can be stored in the fridge and used in baking or for hummus. It is very important to use cheesecloth or nut milk bag if your focus is silky, smooth milk. A fine mesh strainer won’t do it!

Ingredients
PLAIN ALMOND MILK
- Raw almonds ( soaked overnight in cold water*)- 1 cup
- Drinking water- 5 cups
- Salt- ¼ tsp.
- Dates (pitted)- 3
- Vanilla extract- 1 tsp.
- Vanilla powder- ½ tsp.
FOR CHOCOLATE MILK
Cocoa powder - 2 tbsp.
FOR FLAVORED MILK
Berries/ strawberries/ raspberries - ½ cup
Instructions
- In a blender blend together soaked almonds, water, dates, vanilla extract and vanilla powder sugar on high speed for 2-3 minutes.
- Using a cheesecloth or a nut milk bag, strain out the pulp. If you use a cheesecloth, simply lay it over a large bowl, pour the almond mixture, gather up the cheesecloth into a ball and compress it firmly to get the most out of your mixture. Transfer the pulp into a zip log bag and store, you can use it for adding in cookies.
- Transfer almond milk to a bottle or a jar and refrigerate. You can store it in an airtight container for 4-5 days in the fridge or freeze it for 2-3 months.
- Almond drink tends to separate, that's why always stir it before drinking.

- I recommend to soak almonds for 1-3 days. The longer you soak the raw almonds, the creamier your milk will be.
