✅You'll Need
- Butter: Unsalted is best to control the seasoning. Swap with olive oil for a lighter option.
- Honey/Maple Syrup: Both add a touch of sweetness. Use agave syrup if you prefer.
- Garlic: Fresh is key for that bold flavor. Garlic powder works in a pinch—use about 1 teaspoon.
- Lemon Juice: Freshly squeezed gives the best zing. You can use bottled lemon juice if needed.
- Fresh Parsley: Adds a burst of color and freshness. Dried parsley or fresh cilantro can be good alternatives.
- Pineapple: Fresh pineapple brings unbeatable flavor, a firm and juicy texture, and an irresistible aroma. Plus, it’s packed with more vitamins and enzymes than canned, making your dish tastier and healthier. Fresh pineapple is the game-changer here!
- Salmon Fillets: Skin-off is suggested for easy eating. Skin-on fillets work too—just remove the skin before serving.
- Salt and Pepper: Essential for seasoning. Feel free to add other spices like paprika or chili flakes for a kick.
- Lemon Wedges: Optional but great for serving. Lime wedges can be a tangy twist.

🔪How to Make Salmon Foil Packets
Preheat your oven to 400°F (200°C).
Make the Sauce: Melt butter in a small saucepan over low-medium heat. Add honey, garlic, and lemon juice. Whisk until combined and honey is melted. Stir in 1 tablespoon of parsley and set aside.

Prepare the Foil Packets: Cut 4 sheets of aluminum foil (12×12 inches each). Place pineapple slices in the center, sprinkle with pepper, then place salmon fillets on top. Drizzle the honey lemon garlic butter sauce over the salmon. Sprinkle with salt, pepper, and remaining parsley.
Seal and Bake: Fold the foil to make packets. Place on a baking sheet and bake at 375°F (190°C) for 15-20 minutes, until salmon is cooked through.

👨🍳Expert Tips
- Prep Ahead: Assemble the foil packets in advance and store them in the fridge. Perfect for easy weeknight dinners!
- Fresh is Best: Use fresh pineapple for the best flavor and texture—your taste buds will thank you.
- Seal Tight: Seal the foil packets well to lock in all those juicy flavors and keep the salmon moist.
- Spice It Up: Add a pinch of chili flakes or a dash of paprika for a little heat if you like it spicy.
- Watch the Clock: Keep an eye on your salmon to avoid overcooking. It should flake easily with a fork when done.
- Easy Cleanup: Line your baking sheet with an extra layer of foil to make cleanup a breeze.

🗄️Storage and Reheating
- Got leftovers? No problem! Store in an airtight container in the fridge for up to 3 days.
- To reheat, simply pop the foil packets back in the oven at 350°F (175°C) for about 10-15 minutes, or until heated through. For a quicker option, you can microwave the salmon on a microwave-safe plate—just be sure to cover it to keep it moist. Enjoy your delicious meal all over again!
