What is Cowboy Butter?
Cowboy butter is a rich, flavorful sauce made with melted butter, garlic, Dijon mustard, fresh herbs, and a hint of heat from red pepper flakes. Itโs known for its bold, zesty taste, combining the buttery richness with bright lemon and smoky paprika. Originally a steakhouse favorite, this versatile sauce pairs perfectly with shrimp, grilled meats, vegetables, and even crusty bread.
Why You’ll Love This Recipe
- One skillet, 25 minutes. The shrimp and sauce all come together in the same pan. Minimal cleanup, maximum flavor.
- That cowboy butter sauce. Garlic, Dijon, smoked paprika, lemon, and fresh parsley all melted into rich butter. It’s the kind of sauce you’ll want to put on everything โ and with this recipe, you can.
- Endlessly versatile. Serve it over pasta, rice, or grains. Dip crusty bread into the sauce. Add vegetables to the pan. It works every single way.
- Impressive enough for guests, easy enough for Tuesday. This dish looks and tastes restaurant-quality but takes almost no effort.

Ingredient Notes
- Shrimp: Use large shrimp (about 16-20 per pound) for the best texture and flavor. Fresh or frozen works, but if using frozen, make sure to thaw and pat dry to avoid excess moisture.
- Paprika: Regular or smoked paprika adds a subtle smoky depth. If you like a more intense smoky flavor, use smoked paprika specifically.
- Red Chili Flakes: Optional, but they add a mild heat.
- Butter: Use unsalted butter to control the saltiness of the dish. If using salted butter, reduce the added salt in the recipe.
- Dijon Mustard: Adds a slight tang and depth to the sauce. Regular yellow mustard wonโt give the same flavor profile.
- Parsley: Fresh parsley adds brightness and color. Avoid dried parsley, as it wonโt have the same impact.
- Lemon: Use both zest and juice for a balanced citrus note. Fresh lemon is essentialโbottled juice lacks the same freshness.
How to Make Cowboy Butter Shrimp
Season the shrimp and sear in a hot skillet until pink and cooked through. Set aside.

In the same pan, make the sauce with garlic, spices, butter, mustard, lemon juice, and parsley. Toss the shrimp in the sauce, garnish, and serve immediately.

Helpful Tips
- Dry the shrimp thoroughly. Pat them dry with paper towels before seasoning. Wet shrimp steam instead of sear โ and you want that golden color, not grey and soft.
- Don’t overcrowd the pan. Cook the shrimp in a single layer with space between each one. If your skillet is small, cook in two batches. Crowded shrimp steam instead of sear.
- Don’t overcook the shrimp. 1โ2 minutes per side is all it takes. The moment they turn pink and opaque, they’re done. Overcooked shrimp turn rubbery fast.
- Add the butter off the heat. Once the garlic is fragrant, lower the heat before adding the butter and stir it in gradually. This keeps the sauce silky and smooth instead of greasy and broken.
Make It a Meal
| Ingredient | Add-Ins | Result |

| Veggies | Spinach, zucchini, or bell peppers | Adds texture and nutrition |
| Grains | Rice, quinoa, or farro | Makes it heartier and more filling |
| Bread | Crusty French bread or garlic knots | Perfect for soaking up the sauce |

Leftovers and Storage
While Cowboy Butter Shrimp is best enjoyed fresh, you can refrigerate leftovers in an airtight container for up to 2 days. Reheat gently in a skillet or microwave, adding a splash of water or broth to revive the sauce if needed.

Frequently Asked Questions
Yes โ frozen shrimp works perfectly here. Thaw them completely in the fridge overnight or under cold running water, then pat very dry before seasoning. Excess moisture is the enemy of a good sear.
Shrimp are best cooked fresh โ they only take 10 minutes so there’s no real need to prep ahead. You can make the cowboy butter sauce up to 3 days ahead and store it in the fridge, then cook the shrimp fresh when you’re ready to serve.
