Ingredients 

  • 1/2 cup butter, 1 stick, unsalted
  • 1 tablespoon honey or maple syrup
  • 4 large cloves garlic, finely minced
  • 2 tablespoons fresh lemon juice, about ยฝ a lemon
  • 2 tablespoons chopped fresh parsley, divided
  • 1/2 pineapple, sliced
  • 4 6-ounce skin-off salmon fillets, each about 1-inch thick
  • 1/2 teaspoon EACH: salt and pepper
  • Lemon wedges, for serving

Instructions 

  • Preheat your oven to 400ยฐF (200ยฐC).
  • Make the Sauce: In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic, and lemon juice. Whisk until everything is well combined and the honey is melted. Stir in one tablespoon of chopped parsley and set aside.
  • Prepare the Foil Packets: Cut 4 sheets of aluminum foil, each 12ร—12 inches (30ร—30 cm). Place pineapple slices in the center of each sheet and sprinkle with pepper. Place the salmon fillets on top of the pineapple slices.ย 
  • Drizzle the honey lemon garlic butter sauce over the salmon. Sprinkle with salt, pepper, and the remaining chopped parsley.
  • Seal and Bake: Fold the foil over the salmon to make packets. Place the packets on a baking sheet and bake in the preheated oven for 15-20 minutes, until the salmon is cooked through.
