Two more of my favorite hearty soups are chicken meatballs soup and chicken noodle. In this recipe, I sorta combine them into one concept that has a little bit of each idea’s flavor while creating something new all its own.
I have a few friends who just, for medical reasons, aren’t able to manage red meat or pork. Some of them have had gall bladder trouble, some of them suffer from rheumatoid arthritis, and some just have “delicate constitutions” when it comes to meats that aren’t from a fowl. When I want to serve these friends a robust, filling soup, this is my go to recipe.
There are a couple of things to keep in mind for chicken meatballs soup recipe. Unlike my other offerings so far, you will need a crock pot for this dish. You want to make sure those meatballs are cooked all the way through. Although completely cooking things is always something to keep in mind while cooking, it’s particularly pertinent here so as to avoid salmonella.
The other thing is that, again, in my case, I’m making this dish for people with health concerns. For them and myself, I try to find chicken that hasn’t been shot full of hormones and antibiotics during its short life. Free range or at least guaranteed not to have had its growth artificially accelerated is the way to go if at all possible.
Now that we’re done with the kind of unpleasant talk, let’s focus on the good. This soup is delicious! Making the meatballs ahead of time seals in the flavor of the spices I mix into them. Then, I add a different flavor profile to the broth. The two of them combine together into each bowl and create something new.
When making broths, the longer you can let it simmer, the more flavorful it will become. And, again, there are different broth options that may change how this chicken meatballs soup tastes, so feel free to experiment with the ingredients a bit. Or, if you’re feeling especially industrious, try to make your own chicken stock into broth. It’ll take some time and effort, but you may be glad you put both into the dish.

Chicken Meatballs Soup Recipe
- Ground Chicken- 800 gm
- Potatoes- 6-7 medium
- Capsicum - 1 large
- Chicken stock - 2 liter
- Onion- 1 ( for meatballs)
- Garlic cloves- 4-5 ( for meatballs)
- Dry herbs - 1 tbsp ( for meatballs)
- Red Chili - 2
- Salt- To Taste
- Pepper- To Taste
- Wash chicken fillets. Grind fillets, the chopped onion, garlic cloves in a stand electrical grinder.
- Form bite-sized meatballs. I advice to fry them till golden brown color. Drop meatballs into crock pot.
- Wash and peel potatoes, cube them and put into your crock pot too.
- Cut a capsicum into small pieces. Add them with spices, chili, salt and pepper to the soup.
- Pour Chicken or vegetable stock, cover and cook low 3-4 hours or high 2-3 hours.
- Garnish with fresh cilantro leaves right before serving.
