Ingredients 

  • 1/4 cup olive oil, plus more for cooking the chicken
  • 7 ounce can chipotle peppers in adobo sauce, use only the sauce, discard the peppers
  • juice of 1 lime
  • 3 minced garlic cloves
  • ½ tablespoon ancho chili powder
  • 1 ½ teaspoons salt, or to taste
  • 1 teaspoon EACH: coriander powder, cumin powder, dried oregano, black pepper
  • 2 pounds boneless, skinless chicken thighs, or breasts
  • fresh cilantro, to garnish

Instructions 

  • In a large bowl or zip-top bag, mix together 1/4 cup olive oil, chipotle adobo sauce, juice of 1 lime, 3 minced garlic cloves and all the spices (½ tablespoon ancho chili powder, 1 ½ teaspoons salt, 1 teaspoon EACH: coriander powder, cumin powder, dried oregano, black pepper). Add 2 pounds boneless, skinless chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 1 hour (for best flavor, marinate overnight).
  • Stovetop: Heat a cast-iron skillet over medium-high heat. Add vegetable oil and cook the chicken for 5-6 minutes per side, until golden brown and cooked through.
  • Grill: Preheat to medium-high heat and grill the chicken for 6-7 minutes per side until it reaches an internal temp of 165°F (74°C).
  • Transfer to a cutting board, cover loosely with foil, and let rest for 10 minutes before slicing into small pieces.
  • Use in tacos, burritos, rice bowls, or salads. Garnish with fresh cilantro, lime wedges, and your favorite toppings!
