- 1/4 cup olive oil plus more for cooking the chicken
- 7 ounce can chipotle peppers in adobo sauce use only the sauce, discard the peppers
- juice of 1 lime
- 3 minced garlic cloves
- ½ tablespoon ancho chili powder
- 1 ½ teaspoons salt or to taste
- 1 teaspoon EACH: coriander powder, cumin powder, dried oregano, black pepper
- 2 pounds boneless, skinless chicken thighs or breasts
- fresh cilantro to garnish
In a large bowl or zip-top bag, mix together 1/4 cup olive oil, chipotle adobo sauce, juice of 1 lime, 3 minced garlic cloves and all the spices (½ tablespoon ancho chili powder, 1 ½ teaspoons salt, 1 teaspoon EACH: coriander powder, cumin powder, dried oregano, black pepper). Add 2 pounds boneless, skinless chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 1 hour (for best flavor, marinate overnight).
Stovetop: Heat a cast-iron skillet over medium-high heat. Add vegetable oil and cook the chicken for 5-6 minutes per side, until golden brown and cooked through.
Grill: Preheat to medium-high heat and grill the chicken for 6-7 minutes per side until it reaches an internal temp of 165°F (74°C).
Transfer to a cutting board, cover loosely with foil, and let rest for 10 minutes before slicing into small pieces.
Use in tacos, burritos, rice bowls, or salads. Garnish with fresh cilantro, lime wedges, and your favorite toppings!
