Ingredients
Chicken Salad Base
- 2 cups cooked diced chicken
- 1/4 cup finely diced celery, optional: add a pinch of celery salt
- 1/4 cup finely diced red onion
- 2 tablespoons finely chopped fresh parsley, or cilantro
- 2 tablespoons chopped chives, or green onion
Creamy Avocado Dressing
- 1 large ripe avocado, mashed
- 1 tablespoon fresh lemon juice
- 1/3 cup mayo, or half mayo, half Greek yogurt for tang
- 1 teaspoon Dijon mustard
- 1 teaspoon olive oil
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- Make the Dressing: In a large bowl, mash the whole ripe avocado until smooth. Add the lemon juice, mayo, Dijon mustard, olive oil, garlic powder, salt and pepper. Whisk until creamy and well combined.
- Mix the Salad: Add the finely diced chicken, celery, red onion, parsley (or cilantro), and chives to the bowl with the dressing. Season with salt and pepper (start with 1/4 teaspoon each and adjust to taste). Stir gently until everything is evenly coated.
- If the mixture feels too thick, stir in 1 to 4 tablespoons of extra mayo to reach your desired creaminess.
- Serve: Enjoy immediately on toasted bread, in a lettuce wrap, or scooped up with pita chips or crackers.Note: This sandwich filling is best eaten right away, as the avocado dressing can brown after 1–2 hours.
