Chicken Avocado Sandwich

Ingredients

Chicken Salad Base

  • 2 cups cooked diced chicken
  • 1/4 cup finely diced celery optional: add a pinch of celery salt
  • 1/4 cup finely diced red onion
  • 2 tablespoons finely chopped fresh parsley or cilantro
  • 2 tablespoons chopped chives or green onion

Creamy Avocado Dressing

  • 1 large ripe avocado mashed
  • 1 tablespoon fresh lemon juice
  • 1/3 cup mayo or half mayo, half Greek yogurt for tang
  • 1 teaspoon Dijon mustard
  • 1 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  • Make the Dressing: In a large bowl, mash the whole ripe avocado until smooth. Add the lemon juice, mayo, Dijon mustard, olive oil, garlic powder, salt and pepper. Whisk until creamy and well combined.
  • Mix the Salad: Add the finely diced chicken, celery, red onion, parsley (or cilantro), and chives to the bowl with the dressing. Season with salt and pepper (start with 1/4 teaspoon each and adjust to taste). Stir gently until everything is evenly coated.
  • If the mixture feels too thick, stir in 1 to 4 tablespoons of extra mayo to reach your desired creaminess.
  • Serve: Enjoy immediately on toasted bread, in a lettuce wrap, or scooped up with pita chips or crackers.
    Note: This sandwich filling is best eaten right away, as the avocado dressing can brown after 1–2 hours.

Notes

We don’t recommend storing this for more than a day, as the avocado will start to brown. If you do have leftovers, press plastic wrap directly onto the surface and keep it in an airtight container in the fridge. Freezing isn’t ideal—avocado doesn’t hold up well after thawing.
