The first step to follow before you even begin with the baked salmon recipe foil is to select a delicious, tender salmon fillet. Salmon varies in color, some varieties are naturally red, while others have a distinct pink color – the brighter the shade, the fresher the fish. - Olive oil- 2 tbsp/ 30 ml
- Salmon Fillets- 4
- Onion- 1 large (finely sliced)
- Tomatoes- 2 (sliced)
- Mild Cheddar Cheese- 4-5 slices
- Smoked Chorizo sausage- 1 ( If you can’t find these Chilean sausage, use bacon or any sausages)
- Dried oregano- 2 tbsp / 10 ml
- Fresh Rosemary- 1 tbsp (finely chopped)
- Lemon (optional)-1 (sliced)
- Salt- To Taste
- Black Pepper-To Taste
- Serve with potatoes or salad.
- Preheat four 20cm/8in squares of foil and brush each with little oil. Preheat the oven to 180 C/350F /Gas 4
- Place one salmon fillet in the middle of each piece of foil. Top with a few slices of onion, tomato, chorizo sausage and cheese. Season each peace with oregano, rosemary, salt and black pepper.
- Bring up the sides of the foil and seal well at the top to create a neat package.
- Place the packages on the baking sheet and cook about 20 minutes, until the salmon is cooked through and opaque and the cheese is melted.
- Serve with potatoes and summer salad.
