When we starting trying to eat healthier meals, salads became a regular thing for us. Sometimes we eat salad as a side dish and sometimes we have it as a main dish. Whether it is for family meal, barbecue, picnic, dinner party, or a solo dish – this delicious Kale salad always fits the bill. The dressing is made to go along with it and just elevates it amazingly.

I suggest that you make the dressing first, since you can make it and refrigerate it quite a while to be served later. Itโ€™s a very easy one-bowl mix with ingredients that you probably already have.

If you arenโ€™t use to Kale, you are in for a treat. Some people have a rough time with Kale at first due to the heavier texture. In this recipe I use baby kale which avoids most of that problem. When you add the shrimp it brings a sweet flavor to mix with the baby Kale and youโ€™ll probably be a fan for life.

The other thing that makes this particular salad and dressing a common one for me is the extra health benefits. Besides the protein and heart-health benefits of the shrimp, the kale is the main component in the salad. Kale is low calorie and has no fat. It’s high in fiber which we know promotes digestion. Kale has more iron than beef which helps reduce the chances of anemia and fatigue. The high levels of vitamin K helps protect against cancers and can support brain health.

In other words, itโ€™s more than flavorful to eat delicious but also nutritious foods like this Kale salad with the garlic, oil and dairy based dressing. Foods like this can help you expand your palate and introduce new foods that will make you feel better. This salad/dressing combo will give you enough protein to fuel you for a workout. Eating more fresh foods made from scratch aren’t as hard as most people think, but these clean and pure ingredients will improve your body inside and out!

Ingredients 

  • FOR SALAD
  • Fresh baby kale, washed and stems removed- 200 gm / 0.4 pound
  • Medium raw shrimp, peeled and deveined, tails intact- 500 gm / 1 pound
  • Croutons*- 1/2 cup or as needed
  • Shaved parmesan cheese- 1/4 cup
  • Grated Parmesan cheese- 1 tsp.
  • FOR THE DRESSING
  • Sour cream - 4 tbsp.
  • Milk- 4 tbsp.
  • Grated Parmesan cheese- 1 tbsp.
  • Old style whole grain Dijon mustard- 1 1/2 tsp.
  • Garlic cloves, minced- 1
  • Fresh lemon juice- 2 tbsp.
  • Olive oil- 1 tbsp.
  • Salt - as needed

Instructions 

  • Dressing.
  • In a medium bowl combine sour cream, milk, garlic, Dijon mustard, grated Parmesan cheese, lemon juice and olive oil and mix until smooth.
  • Reserve refrigerated until ready to serve. You can make this dressing one or two days ahead.
  • Salad
  • Preheat a cast -iron grill pan until hot , brush with olive oil,add the shrimp and sear about 2-3 minutes or until cooked.
  • Transfer to plate and allow to cool.
  • In the same pan sear baby kale for about 1 minute. Remove to a plate and let it cool.
  • Place greens, shrimps and croutons in a salad bowl. Top with shaved and grated Parmesan cheese. Add dressing to taste and toss.
  • Serve the salad immediately.
  • Enjoy!

Notes

I used store-bought Italian croutons. If you don't have them , it is very easy to make them at home.
YOU WILL NEED
1/2 cup multigrain bread, 1 -inch cubes
2 tbsp. extra virgin olive oil
Salt - as needed
Black pepper- as needed
Method
Preheat your oven to 325 F / 160 C.
In a medium bowl toss the bread cubes in olive oil, then season with salt and pepper. Spread them in an even layer on a baking sheet and bake until crunchy and golden. Remove from the oven and allow to cool.
