Why you’ll love it

Some nights call for fuss-free recipes that taste like a party in a pan. This casserole is one of those. It’s got juicy chicken, black beans, sweet corn, salsa, and a touch of lime for brightness—all smothered in melty cheese and baked under a crunchy tater tot blanket. The best part? You can prep it in about 15 minutes, then let the oven do the rest.

Helpful Tips

  • You don’t need the whole bag of tots—just enough to cover the top in a single layer.
  • For an extra crunchy finish, broil the casserole for 2–3 minutes, but keep a close eye on it.

How to make Fiesta Chicken Tater Tot Casserole

This is just an overview—full instructions are in the recipe card below.

  • Mix the cream cheese with taco seasoning, then stir in salsa and lime juice.
  • Add black beans, corn, chicken, and half the cheese.
  • Spread into a skillet, top with more cheese, then cover with tater tots.
  • Bake until the tots are crisp and golden.

Substitutions and variations

  • Swap the chicken for ground beef, turkey, or even shredded pork.
  • Use spicy salsa or add pickled jalapeños if you like more heat.
  • Try pinto beans instead of black beans for a creamier bite.
  • Make it vegetarian by skipping the chicken and adding extra beans or bell peppers.

What to serve with it

This casserole is filling on its own, but it’s extra fun with toppings! Add fresh cilantro, avocado slices, sour cream, or more salsa on top. A simple green salad with creamy ranch or a zesty coleslaw makes a great side.

Leftovers and storage

If you happen to have leftovers, store them in the fridge for up to 3 days. Reheat in the oven or air fryer so the tots get crispy again. We wouldn’t freeze this one—the tots can get soggy.

❓FAQs

Can I make this casserole ahead of time?

Yes! You can assemble the casserole up to a day in advance. Cover it tightly with foil and refrigerate. When ready to bake, add about 5 extra minutes to the cooking time since it will be starting cold.

Do the tater tots need to be thawed first?

Nope—use them straight from the freezer. Thawed tots won’t crisp up as nicely.

What if I don’t have rotisserie chicken?

You can use any cooked chicken you have on hand, like grilled, baked, or poached chicken breasts or thighs. Shredded turkey also works well.

What’s the best way to reheat leftovers?

For the crispiest tots, reheat in an air fryer or oven at 350°F until warmed through. The microwave works in a pinch, but the tots will be softer.
