😍Why You’ll Love It
We’re all about easy, flavorful dinners, and these creamy mushroom chicken thighs check all the boxes. Here’s why you’ll want to make them again and again:
- ✔ Rich & creamy – A velvety mushroom sauce with garlic and Pecorino Romano.
- ✔ Easy one-pan meal – Everything cooks in just one skillet for minimal cleanup.
- ✔ Perfectly juicy chicken – Searing locks in moisture while keeping the skin crispy.
- ✔ Versatile – Serve it with pasta, mashed potatoes, or steamed veggies.

✅What You’ll Need
- Onion powder & garlic powder – These add rich, savory depth.
- Dried rosemary – A subtle herb that pairs well with mushrooms. Swap with thyme or Italian seasoning for a different flavor profile.
- Corn flour – Helps to achieve a light, crispy coating. All-purpose flour or almond flour can be used as alternatives.
- Chicken thighs – Bone-in, skin-on thighs provide the most flavor, while boneless, skinless thighs cook faster and absorb the sauce well. Chicken breasts can also be used, but they may require a shorter cooking time.
- Salted butter – Enhances the sauce’s richness. Unsalted butter works too; just adjust the seasoning.
- Garlic – Freshly minced garlic gives the best flavor, but garlic paste can be used in a pinch.
- Mushrooms – Cremini (baby bella) or button mushrooms are easy to find and work well, but portobello mushrooms add deeper umami flavor.
- Heavy cream – Half-and-half or coconut cream can be used for a lighter option.
- Pecorino Romano or Parmesan – Adds a salty, nutty finish. Grana Padano or Asiago are excellent substitutes.
