Creamy Mushroom Chicken Thighs

Ingredients 

For The Chicken Thighs

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ยฝ teaspoon dried rosemary
  • 1 teaspoon corn flour
  • ยฝ teaspoon ground black pepper
  • salt , to taste
  • 2 pounds skinless chicken thighs
  • 3 tablespoons olive oil

For the Mushroom Sauce

  • 2 tablespoons salted butter
  • 5 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 ยฝ cups heavy cream
  • ยฝ cup freshly grated Pecorino Romano, or Parmesan cheese
  • 1 tablespoon fresh parsley, to garnish

Instructions 

  • In a small bowl, mix together 1 teaspoon onion powder, 1 teaspoon garlic powder, ยฝ teaspoon dried rosemary, 1 teaspoon corn flour, ยฝ teaspoon ground black pepper, and salt . Rub the seasoning evenly over the chicken thighs.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat. Add the chicken and cook for 6-8 minutes per side, until golden brown and fully cooked. Transfer to a plate and set aside.
  • In the same skillet, melt 2 tablespoons salted butter, then add 5 cloves garlic (minced) and cook until fragrant. Stir in 8 ounces mushrooms (sliced) and sautรฉ for 3-4 minutes. Season with salt and black pepper.
  • Pour in 1 ยฝ cups heavy cream and simmer until slightly thickened. Stir in ยฝ cup freshly grated Pecorino Romano or Parmesan cheese and cook for 1-2 minutes, until melted and smooth. Adjust seasoning if needed.
  • Return the chicken to the skillet, spooning the sauce over the top. Garnish with 1 tablespoon fresh parsley and serve immediately with pasta, steamed vegetables, or mashed potatoes.
