This Fiesta Chicken Tater Tot Casserole is everything you want in a weeknight dinnerโcheesy, creamy, a little zesty, and topped with golden, crispy tots. Itโs family-friendly comfort food that comes together with pantry staples, and itโs the kind of meal everyone will ask for again.

Why youโll love it
Some nights call for fuss-free recipes that taste like a party in a pan. This casserole is one of those. Itโs got juicy chicken, black beans, sweet corn, salsa, and a touch of lime for brightnessโall smothered in melty cheese and baked under a crunchy tater tot blanket. The best part? You can prep it in about 15 minutes, then let the oven do the rest.

Helpful Tips
- You donโt need the whole bag of totsโjust enough to cover the top in a single layer.
- For an extra crunchy finish, broil the casserole for 2โ3 minutes, but keep a close eye on it.
How to make Fiesta Chicken Tater Tot Casserole
This is just an overviewโfull instructions are in the recipe card below.
- Mix the cream cheese with taco seasoning, then stir in salsa and lime juice.

- Add black beans, corn, chicken, and half the cheese.

- Spread into a skillet, top with more cheese, then cover with tater tots.

- Bake until the tots are crisp and golden.
Substitutions and variations
- Swap the chicken for ground beef, turkey, or even shredded pork.
- Use spicy salsa or add pickled jalapeรฑos if you like more heat.
- Try pinto beans instead of black beans for a creamier bite.
- Make it vegetarian by skipping the chicken and adding extra beans or bell peppers.

What to serve with it
This casserole is filling on its own, but itโs extra fun with toppings! Add fresh cilantro, avocado slices, sour cream, or more salsa on top. A simple green salad with creamy ranch or a zesty coleslaw makes a great side.
Leftovers and storage
If you happen to have leftovers, store them in the fridge for up to 3 days. Reheat in the oven or air fryer so the tots get crispy again. We wouldnโt freeze this oneโthe tots can get soggy.

โFAQs
Yes! You can assemble the casserole up to a day in advance. Cover it tightly with foil and refrigerate. When ready to bake, add about 5 extra minutes to the cooking time since it will be starting cold.
Nopeโuse them straight from the freezer. Thawed tots wonโt crisp up as nicely.
You can use any cooked chicken you have on hand, like grilled, baked, or poached chicken breasts or thighs. Shredded turkey also works well.
For the crispiest tots, reheat in an air fryer or oven at 350ยฐF until warmed through. The microwave works in a pinch, but the tots will be softer.
