Sheet Pan Hummus Crusted Chicken Breast

- 4 x 7 ounce 200 grams boneless, skinless chicken breasts
- 2 teaspoons cumin powder
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- Salt as needed
- 2 cups homemade hummus
- 1/4 cup olive oil
- 2 tablespoons chopped fresh parsley
- 4 garlic cloves minced
- Juice of 1 lemon
- 1 pound 500 grams green beans, the rough ends trimmed
- 4-6 lemon slices
Preheat your oven to 400°F |200°C. Lightly grease a baking tray with cooking oil spray. Keep aside.
Season the chicken with cumin powder, garlic salt, onion powder and black pepper on both sides.
Place the chicken breasts on the prepared tray and rub hummus all over the chicken to coat evenly.
Bake in the preheated oven for 15 minutes, then remove from the oven and arrange the green beans around the chicken. Top with lemon slices.
In a small bowl combine olive oil, garlic, lemon juice and parsley.
Pour the mixture over the green beans and chicken, toss well until all of the beans are coated in oil and return to the oven for 10-15 minutes, or until chicken is cooked through ( no longer pink in the middle ) and green beans are crisp-tender.
Garnish with parsley and serve. Enjoy!
