Salmon Alfredo

Creamy garlic butter salmon alfredo is a restaurant quality baked salmon in a delicious creamy alfredo sauce with broccoli! It is all cooked in one pot. Ready in less than 30 minutes!

Ingredients

For the Salmon:

  • Salmon fillets diced-1.2 lbs (600 g)
  • Black pepper and salt -to taste
  • Butter- 4 tablespoons

For Alfredo sauce:

  • Small broccoli cut into florets -1
  • Garlic cloves minced-5
  • Heavy cream- 1 1/2 cups 400 ml
  • Italian seasoning-1 teaspoon
  • Salt- 1/2 teaspoon
  • Black pepper-1/4 teaspoon
  • Fresh grated parmesan cheese-1 cup
  • Fresh parsley finely chopped- 2 tablespoons

Instructions

  • Position a rack in the middle of the oven. Preheat your oven to 375° F/ 190° C.
  • Arrange salmon in a skillet in one layer. Season  with salt and pepper. Add the butter. 
  • Bake for 7-10 minutes or until cooked through. Remove from the oven and transfer on a plate. Alternatively you can pan sear salmon.
  • In the same skillet cook the broccoli over medium heat until just turning vibrant in color. You might need to add 1/4 cup of water and cook until the water evaporates completely.
  • Add the minced garlic and cook further for 40-50 seconds or until fragrant.
  • Pour in the heavy cream, reduce the heat down to low and bring to a gentle simmer. Simmer for 3 minutes, stirring occasionally, until the sauce thickens to your liking. Season the sauce with black pepper, Italian seasoning and salt. 
  • Stir in the parmesan cheese and  cook until it melts. 
  • Return the salmon back to the skillet and give everything a good stir to combine all of the flavors together. 
  • Garnish with fresh parsley. Serve immediately and enjoy!
