Recipe for Banana Bread with Walnuts

Batter:
- Ripe bananas without skin and mashed-3 (2 cups)
- Vegetable oil- 2 tablespoons
- Yogurt-1/2 cup
- Milk- 1/3 cup
- Light brown sugar- 1 cup
- Apple vinegar- 1 tablespoon
- Wholemeal spelt flour- 2 cups
- Baking powder-1 teaspoon
- Baking soda-1/2 teaspoon
- Salt-1/4 teaspoon
- Ground cinnamon- 1 teaspoon
- Walnuts chopped-1/2 cup
Topping:
- Banana sliced vertically-1
- Walnuts chopped- 2 tablespoons
Preheat your oven to 350°F (177°C) with the rack in the center. Grease a 9×5-inch loaf pan. Set aside.
In a medium bowl mash bananas with a fork. Add vegetable oil, yogurt, brown sugar and milk and vinegar. Whisk until well combined.
Add the wholemeal spelt flour, baking powder, baking soda, salt, ground cinnamon and walnuts. Mix just until combined. Don't overmix!
Transfer to the prepared loaf pan. Top with banana slices and chopped walnuts.
Bake for 60-65 minutes at 350°F (177°C). To prevent the sides from getting too brown, cover the bread with aluminium foil after 30 minutes. To check whether the bread is cooked, inserted a toothpick in the center of the loaf. If it comes out clean, the bread is done. Remove from the oven and allow to cool completely in the pan.
