- Penne pasta- 1 lb 500 g
- Vegetable oil- 3 tablespoons
- Chicken breasts sliced- 2 lbs (1 kg)
- Jerk seasoning- 3 tablespoons
- Salt and pepper -to taste
- Garlic cloves minced-4
- Bell peppers thinly sliced- 3, red, green and orange
- Chicken stock or pasta water- 1 cup
- Cooking cream- 2 cups
- Fresh grated Parmesan cheese- 1 cup
- Green onion or parsley- 2 tablespoons , optional
In a large pot heat vegetable oil over medium high heat. Add the chicken and season with jerk seasoning. Cook for 12-15 minutes or until golden brown and cooked through. At this point, start cooking pasta. Check the package instructions and cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes.
Add the garlic and bell peppers and cook for 40-50 seconds or until fragrant.
Pour the chicken stock and cooking cream into the pot. Add the parmesan cheese. Season with salt and pepper to you liking. Bring to a gentle simmer. Simmer for 1-2 minutes or until the sauce thickens slightly.
Add the cooked pasta and give a nice stir.
Garnish with chopped chives or parsley. Enjoy!
