These copycat Popeyes cajun fries are the best homemade French fries ever! They are super crispy, perfectly seasoned with homemade Cajun mix and very addicting.
Slice the potatoes into 1/2 inch thick sticks. To achieve even thickness, use a French fry cutter.
Soak the potato sticks in iced water for at least 1 hour or overnight if time allows. This helps to remove the starch and makes French fries extra crispy.
Rinse the fries 2-3 time with cold water, transfer to a plate lined with paper towel; pat dry and keep aside.
Cajun Seasoning:
In a small bowl mix together the smoked paprika, cayenne pepper, garlic powder, dried oregano and salt. Keep aside.
Popeyes Cajun Fries:
Heat oil in a large pan or deep fryer to 300ºF (150º). Using a slotted spoon, put the potatoes into the oil. Fry them in batches, about 4-5 minutes per batch. Transfer on the paper towels. Repeat with the remaining fries.
Increase the heat to 400º F (200ºC) and fry each batch a second time or until crispy and golden brown, about 3-4 minutes.
