Easy Meatloaf with Few Ingredients

For the Meatloaf:
- Ghee/ butter-2 tablespoons
- Medium onion finely chopped-1
- Ground beef 80-85 % lean- 1 1/2 lbs (700 g)
- Saltines crackers plain or flavored- 3/4 cup
- Cheddar cheese grated- 1 1/4 cup
- Parsley finely chopped-2 tablespoons
- Large eggs- 2
- Worcestershire sauce- 1 tablespoon
- Tomato sauce- 1/2 cup
- Ground black pepper- 1/2 teaspoon
- Salt - 1 1/2 teaspoon or to taste
For the Glaze:
- Tomato sauce- 1/4 cup
- Ketchup-1/4 cup
Preheat your oven to 350 F (175 C). Grease a grill skillet or a regular 9 x 13- inch baking sheet.
In a large skillet/pan heat ghee ( or butter) over medium high heat. Add the chopped onion and saute until translucent, about 4-5 minutes. Remove from the heat and allow to cool for a few minutes.
In a large bowl combine the beef, saltine crumbs, cooled onion, parsley, cheddar cheese, eggs, tomato sauce, Worcestershire sauce, salt and pepper. Gently mix the ingredients with your hands JUST until combined. Don't overmix! Transfer the mixture on the prepared skillet/ baking sheet and form a 7 x 9-inch loaf.
In a medium bowl combine ketchup and tomato sauce. Pour the glaze over the meatloaf and spread evenly with a spoon to cover.
Bake in the preheated oven for 1 hour 10 minutes. Allow to rest for 10 minutes before slicing.
