For The Chicken:
- Large boneless and skinless chicken breasts halved horizontally to make 4-2
- All-purpose flour-3 tablespoons
- Finely grated Parmesan cheese- 3 tablespoons
- Garlic powder- 1 teaspoon
- Salt & pepper- to taste
- Oil-2 tablespoons
For The Sauce:
- Butter-1 tablespoon
- Garlic minced-3
- All-purpose flour-1 tablespoon
- Chicken broth- 3/4 cup
- Cooking cream-1 cup
- Freshly grated Parmesan cheese-1/2 cup
- Fresh thyme sprigs-1-2
- Black pepper & salt-to taste
Combine the flour, parmesan and garlic powder in a shallow bowl. Season the chicken with salt and pepper. Dredge in the flour mixture and shake off excess. Keep aside.
In a large skillet heat oil over medium high heat. When it is hot, add the chicken and cook until golden on both sides and cooked through, about 4-5 minutes per side. The cooking time will depend on the thickness of your fillets. Transfer to a plate and keep warm.
In the same skillet melt butter over medium heat. Add the flour and garlic and cook for 20 seconds, stirring continuously.
Pour in the chicken broth and whisk until well combined and lumps free.
Add in the cooking cream and bring the sauce to a gentle simmer; season with salt and pepper to your taste; stir in the parmesan cheese. Continue cooking for about 1-2 minutes until thickened. (If the sauce is too runny for your liking, add more parmesan cheese or flour. It will begin to thicken immediately.
Return the chicken back to the skillet, allow to simmer in the sauce for a minute to soak up all the flavors. Garnish with fresh thyme sprigs or parsley. Enjoy!
