Cilantro Jalapeno hummus

Vibrant Cilantro Jalapeno Hummus is a fresh and healthy chickpea dip. It is quick and easy to make. A perfect side dish for any roast and a great dip for snacks or veggies. Gluten free, vegan and packed with nutrients!

Ingredients

  • Canned chickpeas drained and rinsed - 1 can ( 15 oz)
  • Garlic cloves- 2
  • Cilantro leaves leaves removed from the stems- 1 cup
  • Jalapenos sliced-1
  • Juice of 1 lemon
  • Tahini sesame paste- 2 tablespoons
  • Cumin seeds ground- 1 teaspoon
  • A pinch of salt

To Garnish:

  • Cooked chickpeas-1 tablespoon
  • Jalapeno slices
  • Sumac- 1/2 teaspoon
  • Sesame seeds- 1/2 teaspoon
  • Olive oil- as needed
  • Cilantro leaves- 1 teaspoon

Instructions

  • Place chickpeas, garlic, tahini, cilantro leaves, lemon juice  and jalapeno slices into the bowl of a food processor fitted with the blade attachment. Season with cumin and salt. Process until smooth. You may need to stop the machine and scrape down the sides. Don't add any water! Taste and adjust salt, lemon and jalapeno. 
  • Transfer  to a serving plate. Drizzle with olive oil and top with chickpeas and jalapeno slices.  Sprinkle sumac and sesame seeds. Cover with plastic and refrigerate until ready to serve.
