Beef in Oyster Sauce

Ingredients

  • 1 pound lean beef steak flank, sirloin, or rump, sliced thinly into 2-inch long strips
  • 1 tablespoon avocado oil
  • 3 tablespoons oyster sauce
  • 2 tablespoons finely chopped spring onions

For the Marinade:

  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon Shaoxing rice wine or dry sherry
  • 2 teaspoons cornstarch

Instructions

  • Place the sliced beef in a bowl, add all the marinade ingredients (1 tablespoon low-sodium soy sauce, 2 teaspoons sesame oil, 1 tablespoon Shaoxing rice wine or dry sherry, 2 teaspoons cornstarch), and toss to coat evenly. Let it marinate for about 20 minutes.
  • Heat a wok or large frying pan over high heat until it’s very hot. Add 1 tablespoon avocado oil and, once it begins to shimmer and smoke slightly, add the beef. Stir-fry for 3–5 minutes until it’s just browned.
  • Pour in 3 tablespoons oyster sauce and stir well to coat everything in the sauce. Cook further for 1 minute.
  • Transfer to a serving plate, sprinkle with 2 tablespoons finely chopped spring onions, and serve immediately.

Notes

Got leftovers? Store them in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over medium heat or pop them in the microwave until warmed through.
