Ingredients

  • 1 pound flank steak or skirt steak sliced into thin strips
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium red onion sliced
  • 2 tablespoons olive oil
  • 3 tablespoons fajita seasoning store-bought or homemade
  • 3 garlic cloves grated, using Microplane
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream guacamole, salsa, shredded cheese, lime wedges

Instructions

  • Preheat your air fryer to 390°F (200°C).
  • Prepare the Steak and Veggies: In a large bowl, toss the steak strips, bell peppers, and onions with olive oil, fajita seasoning, garlic, salt, and pepper. Make sure everything is evenly coated.
  • Air Fry the Steak and Veggies: Place the seasoned steak and veggies in the air fryer basket, making sure not to overcrowd them. You may need to cook in batches depending on the size of your air fryer. Cook at 390°F for 12-14 minutes, shaking the basket halfway through for even cooking.
  • Check for Doneness: Cook until the steak reaches your preferred doneness and the veggies are tender with a slight char.
  • Serve: Warm up your tortillas and serve the steak fajitas with your favorite toppings like sour cream, guacamole, salsa, or shredded cheese. Add a squeeze of fresh lime for extra flavor!

Notes

Let the fajitas cool to room temp, then stash them in an airtight container in the fridge—they’ll stay good for 3-4 days. When you’re ready to enjoy them again, just reheat in the microwave, skillet, or air fryer until warmed through and ready to serve!
