Description
Syrniki are traditional Russian pancakes made of cottage cheese and served with sour cream or fresh berries like raspberries, strawberries or blueberries . They are pillowy-soft on the inside and crispy on the outside. A healthy, delicious and perfect breakfast in less than 30 minutes!
Ingredients
FOR SYRNIKI
- Cottage cheese-700 gm / 1.5 lbs
- All-purpose flour- 3/4 cup, plus extra for coating
- Large egg- 1
- Sugar- 1/3 cup
- Vanilla extract- 1 tsp.
- Black raisins- 1/3 cup, optional
- Vegetable oil -1 -2 tbsp , for frying syrniki
FOR SERVING
- Berries
- Powdered sugar
- Sour cream
- Honey
Instructions
- In a large bowl, crumble cottage cheese, using a fork.
- Add an egg, vanilla extract and sugar and mix well.
- Stir in flour and raisins ( if using), then mix well again. The batter will be thick like dough, not similar to the regular pancake batter.
- In a shallow bowl keep 2-3 tbsp. of flour to dredge the pancakes.
- Take 1 1/2 tbsp. of dough and form a ball, flatten the side of the ball to get a cube-shaped pancake/ syrnik. Dredge pancakes with flour on all the sides and shake off extra flour. Repeat the same with the remaining dough.
- In a large non-stick pan heat 2 tbsp. of vegetable oil, gently put syrniki into the pan. Cook about 10-12 minutes ( 3 minutes x 4 sides) on medium heat. Transfer to a paper towel and allow to cool. You might need to cook pancakes in 2-3 batches, depend on the size of your pan.
- Sprinkle with powdered sugar and serve with your favorite toppings. In Russia we usually serve them with sour cream, honey and fresh berries like raspberries and strawberries.
