Description

Experience the spicy kick of Roasted Jalapeno Popper Grilled Cheese. This sandwich melds gooey cheese with fiery roasted jalapenos, sandwiched between golden, crispy bread for a delicious blend of heat and flavor.


Ingredients

  • 5 medium jalapeños, stems removed, sliced in half, and seeded
  • 1 tablespoon olive oil
  • 4 ounces cream cheese, room temperature
  • 1 garlic clove, grated on a Microplane or finely minced
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1/2 cup mild cheddar cheese, shredded, divided
  • 1/2 cup Monterey Jack cheese, shredded, divided
  • 6-8 strips bacon, cooked, divided
  • 4 slices bread of your choice
  • 4 tablespoons unsalted butter, room temperature, divided

Instructions

  • Preheat your air fryer to 350°F.
  • Brush all sides of the jalapeños with olive oil and then place them in the air fryer basket. Air fry for 8-12 minutes, flipping them halfway through the cooking process, until they reach your desired level of doneness. Remove from the air fryer basket and set it aside to cool slightly.
  • In a medium mixing bowl, combine cream cheese, garlic, pepper, and onion powder. Mix until well-blended.
  • After the jalapeños have cooled down, roughly chop them and gently fold them into the cream cheese mixture.
  • Butter one side of a slice of bread. On the opposite side of the bread, spread half of the cream cheese mixture. Layer 3 slices of bacon and 1/4 cup of cheddar cheese and 1/4 cup of Monterey jack cheese on top of the cream cheese mixture. Place another slice of bread on top and butter the outside. Repeat these steps with the remaining slices of bread.
  • Place the buttered sandwich in a skillet and cook it over medium heat, flipping it to toast both sides. This should take about 3-5 minutes per side. Once the bread is toasted to your liking and the cheese is completely melted, your sandwich is ready.
  • Serve it immediately.

Notes

Store in the fridge for up to 24 hours in an airtight container. Reheat on the stovetop for crispiness. Note: Over time, the bread may become soggy from the cream cheese.
