Description
Super moist and easy Banana bread recipe with walnuts! It has amazingly soft crumb, brown sugar flavors and bursts with walnuts in every bite. It is a one bowl banana bread recipe. Perfect for breakfast or lunch!
Ingredients
Batter:
- Ripe bananas ( without skin and mashed)-3 (2 cups)
- Vegetable oil- 2 tablespoons
- Yogurt-1/2 cup
- Milk- 1/3 cup
- Light brown sugar- 1 cup
- Apple vinegar- 1 tablespoon
- Wholemeal spelt flour- 2 cups
- Baking powder-1 teaspoon
- Baking soda-1/2 teaspoon
- Salt-1/4 teaspoon
- Ground cinnamon- 1 teaspoon
- Walnuts ( chopped)-1/2 cup
Topping:
- Banana ( sliced vertically)-1
- Walnuts (chopped)- 2 tablespoons
Instructions
- Preheat your oven to 350°F (177°C) with the rack in the center. Grease a 9×5-inch loaf pan. Set aside.
- In a medium bowl mash bananas with a fork. Add vegetable oil, yogurt, brown sugar and milk and vinegar. Whisk until well combined.
- Add the wholemeal spelt flour, baking powder, baking soda, salt, ground cinnamon and walnuts. Mix just until combined. Don't overmix!
- Transfer to the prepared loaf pan. Top with banana slices and chopped walnuts.
- Bake for 60-65 minutes at 350°F (177°C). To prevent the sides from getting too brown, cover the bread with aluminium foil after 30 minutes. To check whether the bread is cooked, inserted a toothpick in the center of the loaf. If it comes out clean, the bread is done. Remove from the oven and allow to cool completely in the pan.
