Description

Super moist and easy Banana bread recipe with walnuts! It has amazingly soft crumb, brown sugar flavors and bursts with walnuts in every bite. It is a one bowl banana bread recipe. Perfect for breakfast or lunch!


Ingredients

Batter:

  • Ripe bananas ( without skin and mashed)-3 (2 cups)
  • Vegetable oil- 2 tablespoons
  • Yogurt-1/2 cup
  • Milk- 1/3 cup
  • Light brown sugar- 1 cup
  • Apple vinegar- 1 tablespoon
  • Wholemeal spelt flour- 2 cups
  • Baking powder-1 teaspoon
  • Baking soda-1/2 teaspoon
  • Salt-1/4 teaspoon
  • Ground cinnamon- 1 teaspoon
  • Walnuts ( chopped)-1/2 cup

Topping:

  • Banana ( sliced vertically)-1
  • Walnuts (chopped)- 2 tablespoons

Instructions

  • Preheat your oven to 350°F (177°C) with the rack in the center. Grease a 9×5-inch loaf pan. Set aside.
  • In a medium bowl mash bananas with a fork. Add vegetable oil, yogurt, brown sugar and milk and vinegar. Whisk until well combined.
  • Add the wholemeal spelt flour, baking powder, baking soda, salt, ground cinnamon and walnuts. Mix just until combined. Don't overmix!
  • Transfer to the prepared loaf pan. Top with banana slices and chopped walnuts.
  • Bake for 60-65 minutes at 350°F (177°C). To prevent the sides from getting too brown, cover the bread with aluminium foil after 30 minutes. To check whether the bread is cooked, inserted a toothpick in the center of the loaf. If it comes out clean, the bread is done. Remove from the oven and allow to cool completely in the pan.
