- 3 cups (1 ½ pounds) cottage cheese well-drained
- ½ cup Greek yogurt or sour cream full-fat
- ½ cup granulated sugar
- 3 tablespoons cornstarch
- 3 large eggs
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup fresh strawberries hulled & halved
- ⅓ cup sliced almonds
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper for easy removal.
Make the filling: Add the cottage cheese, Greek yogurt, sugar, salt, vanilla, eggs, and cornstarch to a large bowl. Blend with a hand blender until completely smooth.
Assemble: Pour filling into prepared pan and smooth the top evenly.
Add topping: Arrange strawberry halves on top, cut-side up. Scatter sliced almonds over the surface.
Bake: 50-55 minutes until golden and the center is set.
Cool: Turn off oven, crack the door open, and let rest for 10-15 minutes.

- Don't panic if it seems too soft!: When you first take it out of the oven, it will have a soft, custard-like texture — this is completely normal! It may jiggle and seem underbaked, but trust the process. After cooling for 15-30 minutes (or overnight in the refrigerator), the texture will firm up significantly and become dense and creamy like a cheesecake.
- Cottage cheese may contain a lot of liquid! If not properly drained, your strawberry bake will be too wet and won't set properly. Place cottage cheese in the cloth, twist tightly, and squeeze firmly over the sink.
