Smoked Salmon Pizza

Ingredients

  • 1 pre-made pizza crust or homemade pizza dough
  • 1/2 cup cream cheese or mascarpone
  • 1/2 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 garlic clove minced or grated, using a microplane
  • Salt and pepper to taste
  • 1/2 cup red onion thinly sliced
  • 2 tablespoons capers drained
  • 4 ounces smoked salmon
  • 1/2 avocado sliced thinly
  • A handful of fresh baby arugula rocket
  • Olive oil for drizzling

Instructions

  • Preheat your oven to 400°F. If using a pizza stone, place it in the oven to heat up.
  • In a small bowl, mix the cream cheese (or mascarpone), lemon juice, dill, and garlic. Season with salt and pepper to taste. Keep aside.
  • Roll out your pizza dough on a lightly floured surface to your desired thickness. Transfer it to a pizza stone or baking sheet.
  • Drizzle the olive oil on the pizza base and spread the cream cheese mixture over it. Add the onions and capers on top. Bake in the oven for 10 minutes.
  • Remove from the oven and top with salmon, avocado slices, and arugula leaves. Alternatively, put it back in the oven to warm the avocado and salmon.
  • Slice and serve immediately.

Notes

To store leftover pizza, place the slices in an airtight container or wrap them tightly in plastic wrap and refrigerate for up to 2 days.
To reheat, preheat your oven to 350°F (175°C) and place the pizza slices on a baking sheet. Heat for about 10 minutes, or until warmed through. You can also reheat it in an air fryer. Set it to 350°F (175°C) and heat the pizza for 2-3 minutes or until warmed through. Avoid using the microwave, as it can make the crust soggy.
